Southern Blackeyed Peas USA

On New Year's eve in the south USA, people are soaking their blackeyed peas for New Years day meal. These are eaten for good luck by many and each cook has their own way of preparing them.
Southerners do not eat these once a year it's a regular item on the table all year long. It is one of those foods you can eat as a main dish or as a side item to go with many foods such as southern fried chicken, a veggie plate, pork BBQ. Blackeyed peas are called by some "Southern caviar".

Ingredientes

  • 1 pound bag of dried blackeyed peas
  • 8 cups cold water or more to cover
  • salt
  • black cracked pepper
  • 1 medium onion
  • 3 or more slices of lean smoked ham diced or
  • a meaty ham bone.
  • red Chile pepper flakes to taste

Direcciones

  1. Empty bag of blackeyed peas into large bowl or plastic dishpan and sort to remove stones or grit. Rinse and place in large container.
  2. Pour over enough cold water about 8 cups to cover let soak overnight or start early in the morning for cooking later in the day.
  3. Pour off the soaking water.
  4. Place your cooking pot like Dutch oven on top of stove and saute the onion in light vegetable oil until soft add black cracked pepper to taste and chopped or diced ham.
  5. Place blackeyed peas in pot along with red chile pepper flakes to taste. Cover with water to cover and bring to a boil. Turn down heat and simmer for 3 hours taste for salt and add if necessary .
  6. A long slow cooking process makes the difference in the taste and texture. Stir and check for extra water during cooking time. Keep lid ajar during simmering time.
