%20I%20also%20wanted%20to%20try%20and%20remain%20true%20to%20the%20overall%20focus%20of%20my%20blog%20(Cajun,%20Creole,%20and%20Southern%20food).%3C/p%3E%3Cp%3EI've%20been%20off%20topic%20a%20lot%20lately%20with%20Cinco%20de%20mayo%20and%20such.%20But%20like%20everyone%20else,%20we%20eat%20a%20variety%20of%20foods%20and%20not%20solely%20one%20style!%3C/p%3E%3Cp%3EMy%20interpretation%20of%20this%20month's%20ingredients:%3C/p%3E%3Cp%3ESouthern%20Breakfast%20Napoleons%3C/p%3E%3Cp%3EWhile%20I%20don't%20care%20much%20for%20greens,%20they%20ended%20up%20being%20my%20inspiration%20since%20they%20are%20so%20very%20Southern,%20ya'll.%3C/p%3E%3Cp%3EThe%20eggs%20and%20greens%20are%20obvious%20in%20the%20picture.%20The%20cheese%20is%20incorporated%20in%20the%20grits%20cakes.%20Mmmmm.%20Grits.%20Double%20Mmmm.%20Cheese%20grits.%3C/p%3E%3Cp%3EIf%20you've%20been%20reading%20along,%20you%20know%20I%20didn't%20touch%20an%20egg%20so...um...%20undercooked.%20This%20was%20The%20Husband's%20plate.%20My%20egg%20was%20over,%20over-hard.%3C/p%3E%3Cp%3ESouthern%20Breakfast%20Napoleons%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20cook%20the%20bacon%20until%20almost%20crisp.%20While%20the%20bacon%20cooks,%20wash%20and%20drain%20the%20spinach.%20Add%20the%20chopped%20onion%20to%20the%20pot%20and%20saut%C3%A9%20until%20tender.%20Add%20the%20garlic%20and%20saut%C3%A9%20for%20a%20couple%20of%20minutes.%20Add%20the%20spinach%20and%20toss%20to%20coat%20with%20bacon%20drippings.%20Season%20with%20salt,%20pepper,%20and%20cayenne.%20Cook%20until%20wilted.%3C/p%3E%3Cp%3EFor%20the%20eggs:%3C/p%3E%3Cp%3Ebutter,%20oil,%20or%20bacon%20drippings%20(I%20won%E2%80%99t%20judge)%3C/p%3E%3Cp%3E4%20eggs%3C/p%3E%3Cp%3Esalt%20&%20pepper%20to%20taste%3C/p%3E%3Cp%3EThis%20is%20prettiest%20with%20a%20fried%20egg;%20however%20feel%20free%20to%20cook%20your%20egg%20any%20way%20you%20like.%3C/p%3E%3Cp%3EHeat%20a%20pat%20of%20butter%20in%20a%20small%20frying%20pan%20(or%20heat%20oil%20or%20bacon%20drippings%20if%20you%20prefer).%20When%20hot,%20crack%20on%20egg%20into%20the%20pan.%20Season%20with%20salt%20and%20pepper%20and%20cook%20until%20set%20(or%20as%20set%20as%20you%20like).%20Repeat%20with%20remaining%20eggs.%3C/p%3E%3Cp%3ETo%20assemble:%3C/p%3E%3Cp%3EYou%E2%80%99ll%20need%20the%20following:%3C/p%3E%3Cp%3Eheated%20cheese%20grits%20cakes%3C/p%3E%3Cp%3Ecooked%20spinach/greens%3C/p%3E%3Cp%3Efried%20eggs%3C/p%3E%3Cp%3Ereserved%20spinach%20leaves,%20cut%20chiffonade%20style%20(if%20desired)%3C/p%3E%3Cp%3Ehot%20sauce%20(if%20desired)%3C/p%3E%3Cp%3EPlace%20the%20heated%20cheese%20grits%20cakes%20on%204%20warm%20plates.%20Top%20each%20with%20a%20mound%20of%20spinach.%20Gently%20place%20a%20fried%20egg%20over%20each.%20Add%20a%20few%20dashes%20of%20hot%20sauce%20to%20each%20egg%20(or%20pass%20at%20the%20table).%20Scatter%20spinach%20chiffonade%20over%20each%20egg.%3C/p%3E){kind=link}
