,%20but%20I%20am%20in%20the%20midst%20of%20reviewing%20a%20new%20gluten-free%20cookbook,%20Jules%20E.%20Dowler%20Shepard's%20%22Free%20for%20All%20Cooking%22%20(review%20to%20follow%20soon%20in%20a%20separate%20post),%20so%20I%20made%20her%20recipe%20for%20Cornbread,%20leaving%20out%20the%20corn%20kernels%20and%20hot%20peppers.%20This%20made%20a%20terrific%20cornbread,%20fluffy%20and%20crumbly%20at%20the%20same%20time,%20with%20lots%20of%20Crispy%20edges%20from%20being%20finished%20up%20in%20the%20oven%20in%20an%20iron%20skillet.%3C/p%3E%3Cp%3ESince%20I%20was%20intending%20much%20of%20this%20cornbread%20for%20my%20Stuffing%20later%20on,%20I%20loosely%20wrapped%20the%20leftovers%20and%20kept%20them%20in%20my%20bread%20box%20to%20dry%20out.%3C/p%3E%3Cp%3EOn%20Thanksgiving%20morning%20I%20prepared%20my%20stuffing%20and%20baked%20it%20early%20on,%20so%20I%20could%20make%20room%20for%20roasting%20the%20Big%20Bird%20later.%20Then%20I%20only%20had%20to%20reheat%20it%20and%20some%20other%20side%20dishes%20when%20the%20turkey%20was%20resting.%20Here's%20my%20recipe:%3C/p%3E%3Cp%3ESouthern%20Cornbread%20Dressing%3C/p%3E%3Cp%3E3%20cups%20cornbread,%20crumbled%3C/p%3E%3Cp%3E2%20Tbsp.%20butter%20(plus%20extra%20softened%20butter%20to%20grease%20your%20casserole%20dish)%3C/p%3E%3Cp%3E3%20ribs%20celery,%20diced%3C/p%3E%3Cp%3E1%20onion,%20peeled%20and%20chopped%3C/p%3E%3Cp%3E1/2%20cup%20chopped%20bell%20peppers%20(I%20had%20a%20mix%20of%20red%20and%20green%20garden%20peppers%20from%20my%20freezer,%20but%20you%20could%20use%201%20red%20or%20green%20fresh%20pepper,%20seeded%20and%20chopped)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20300%20degrees%20F.%20Spread%20cornbread%20out%20on%20ungreased%20baking%20sheet%20and%20bake%20for%2020%20minutes,%20stirring%20them%20around%20a%20couple%20of%20times%20during%20the%20cooking.%20Let%20cool%20on%20sheet.%3C/p%3E%3Cp%3EButter%20a%201%20quart%20casserole%20dish.%20Set%20aside%3C/p%3E%3Cp%3EHeat%202%20Tbsp.%20butter%20in%20frying%20pan.%20Add%20onion%20and%20celery%20and%20fry%20until%20soft%20and%20golden,%20about%205%20minutes,%20add%20peppers%20and%20fry%20another%207-10%20minutes,%20to%20soften%20them%20up%20too.%3C/p%3E%3Cp%3ECrank%20oven%20temperature%20up%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20toss%20toasted%20cornbread%20with%20sauteed%20vegetables%20and%20sage.%20Add%20stock%20in%20slowly%20and%20mix%20gently%20to%20moisten.%20Season%20with%20salt%20and%20pepper%20to%20taste%20BEFORE%20adding%20beaten%20eggs%20and%20mix%20gently%20to%20keep%20cornbread%20cubes%20from%20crumbling%20too%20much.%3C/p%3E%3Cp%3ETurn%20out%20dressing%20into%20pregreased%20baking%20dish%20and%20pat%20down%20gently%20into%20the%20pan.%20Bake%20uncovered%20at%20350%20degrees%20F%20for%2025%20minutes.%3C/p%3E%3Cp%3EServes%206-8%20stuffing%20lovers.%3C/p%3E%3Cp%3EI%20may%20be%20Donna%20Quixote,%20forever%20tilting%20at%20windmills%20in%20the%20hopes%20that%20I%20can%20get%20my%20kids%20to%20appreciate%20real%20stuffing%20and%20real%20cranberry%20sauce%20on%20the%20holiday%20table,%20but%20I%20do%20know%20that%20my%20husband%20and%20I%20slurped%20down%20this%20great,%20naturally%20GF%20Cornbread%20Dressing%20and%20enjoyed%20it%20thoroughly.%20I%20hope%20you%20enjoy%20it%20too.%3C/p%3E%3Cp%3EI'm%20sending%20a%20plate%20over%20to%20EKat's%20Kitchen%20for%20a%20Friday%20Potluck,%20and%20will%20be%20interested%20to%20see%20what%20others%20are%20making%20for%20Christmas%20week.%20Myself,%20I'm%20hustling%20back%20to%20the%20kitchen%20to%20start%20two%20pans%20of%20lasagna%20(one%20awesome%20veggie,%20gluten-free%20lasagna,%20and%20one%20glutenous%20meaty%20lasagna),%20a%20vegetable%20and%20dip%20spread,%20and%20a%20gluten-free%20version%20of%20my%20cousin-in-law's-wife's%20amazing%20Irish%20Cream%20Cheesecake%20for%20our%20Christmas%20Eve%20supper%20tonight.%20If%20the%20cheesecake%20recipe%20works%20I'll%20be%20posting%20that%20recipe%20here%20later%20on.%3C/p%3E%3Cp%3EMerry%20Christmas!%3C/p%3E){kind=link}
