Ingredientes

  • 2 cloves garlic, smashed
  • 1 lemon, sliced
  • 1 sm. onion, peeled and quartered
  • Shrimp boil seasoning mix (recipe below)
  • 1 1/2 to 2 pound medium shrimp
  • 4 bay leaves
  • 1 T black peppercorns or possibly coarse pepper
  • 1 T salt
  • 2 teaspoon cayenne pepper
  • 1 teaspoon celery seed
  • 1 teaspoon whole cloves
  • 1 teaspoon mustard seed
  • 1 T allspice
  • 1 teaspoon dry thyme leaves

  1. in a 4-6 qt pot, put together 2 qts water, garlic, lemon, onion and shrimp boil seasoning mix. Cover and bring to a boil, reduce heat and simmer 20 min. Bring water back to boil; add in shrimp. Cover and take off heat. Let stand till shrimp shells are completely pink and shrimp are white in center (about 3 min for medium size shrimp). With a slotted spoon, transfer shrimp to a serving platter. Poaching liquid may be strained and store in refrigerator or possibly freezer for use once more.
  2. Put together all ingredients. One recipe will season 2-3 qts of water; sufficient to cook 2-3 lb of shrimp.
