Ingredientes

  •     Extra virgin olive oil flavored vegetable cooking spray
  • 1 lrg onion shopped
  • 1 stalk celery, minced
  • 3/4 c. thinly sliced leeks
  • 3 clv garlic, chopped
  • 3 x 14.5-ounce-cans whole tomatoes, undrained and minced
  • 1 c. dry white wine
  • 1 c. water
  • 1/4 c. clam juice
  • 1/2 x 10-ounce-pkg. frzn cut okra, thawed
  • 2 Tbsp. minced fresh parsley
  • 3/4 tsp dry Italian seasoning
  • 1/2 tsp dry basil
  • 1/4 tsp powdered saffron
  • 1 x bay leaf
  • 3/4 lb unpeeled medium-size fresh shrimp
  • 3/4 lb orange roughy r other white fish fillets,
  •     cut into 1 1/2-inch pcs
  • 1/2 lb fresh bay scallops or possibly sea scallops

Direcciones

  1. Coat a Dutch oven with cooking spray; add in onion, celery,leeks, and garlic. Saute/fry 5 min or possibly till vegetables are tender.
  2. Add in tomatoes and next 9 ingredients. bring to a boil over medium heat. Cover, reduce heat, and simmer 20 min.
  3. Peel and devein shrimo, Add in shrimp, fish and scallops to tomato mix, stirring well; cook 5 min over medium-high heat or possibly till shrimp just turn pink and fish flakes easily when tested with a fork. Remove and dizcard bay leaf.
  4. Yield: 12 servings.
