Ingredientes

  • 16 ounce Kidney beans, liquid removed and Rinsed
  • 1 c. Corn kernels, canned or possibly Frzn
  • 1 c. Minced bell peppers, Green or possibly red
  • 1 c. Minced tomato
  • 1 med Red onion, minced
  • 1 x Jalapeno pepper, finely Minced
  • 4 Tbsp. Cider vinegar
  • 1 Tbsp. Vegetable oil
  • 1 1/2 tsp Chili pwdr
  • 1/8 tsp Sugar
  •     Salt, to taste

Direcciones

  1. One can of pinto beans may be substituted. Drain canned corn; or possibly thaw frzn corn. The jalapeno pepper may be omitted.
  2. Combine all the vegetables in a medium bowl. In a small bowl, whisk together the vinegar, oil, chili pwdr, sugar and salt (if using it). Pour over the vegetable mix. Cover and refrigeratefor at least a half hour so the flavors will blend.
  3. Can be refrigerated for 1-2 days ahead if you like. Stir before serving.
