Receta Southwestern Breakfast Skillet

Now this is a great breakfast dish that is worthy of a place on your dinner table as well. I am a big fan of breakfast for dinner and this is just the kind of meal I like for those evening breakfasts. Of course as y’all know, I love spicy foods. So you’ll see this reflected in this recipe. But you can just as well leave out the dried pepper flakes and hot sauce to bring it down a notch or 10 on the heat scale.

Either way, I know y’all are going to love this quick and easy skillet breakfast.

Ingredients:

Whisk together eggs and milk, season with salt and pepper.

Pour mixture into preheated 12 inch cast iron skillet, with 1 tablespoon oil. Cook over medium heat, stirring occasionally, until just set (leave a little wet). Place eggs in a dish and cover with tinfoil. Set aside.

No add the sausage, cook until starting to brown then add the onion, peppers, pepper flakes, hot sauce and garlic. Cook until sausage is cooked through and onions and peppers are softened. Scoop into a bowl and cover with tinfoil.

Add a remaining oil to skillet, turn up heat to medium-high and cook potatoes in skillet until brown and crisp. Leave them alone for a few minutes and allow to brown well before turning. Season with salt and pepper and once the potatoes are cooked remove from heat, add the sausage mixture back to pan and stir.

Now add eggs over top then top with cheese. Add about 3-4 tablespoons of water to pan to steam and cover with a lid or foil for 2-3 minutes to melt cheese and heat thoroughly.

Serve with salsa and sour cream.
