Southwestern Red Onion-Topped Potatoes

These savory potatoes would be delicious with any grilled main dish. Fresh, cilantro sparks the rich topping of cheese and onions.

Ingredientes

  • 3 Large Baking Potatoes
  • 1/4 Tsp. Salt
  • 1/8 Tsp. Ground Black Pepper
  • 1 Cup Queso Anejo
  • 3/4 Cup Red Onion, Diced
  • 1 Tbsp. Fresh Cilantro, Chopped
  • 1 Clove Garlic, Minced

Direcciones

  1. Heat oven to 375°F. Bake potatoes until tender, about 1 hour.
  2. Cut potatoes lengthwise into halves; score top of each half crisscross fashion, being careful not to cut through skin. Sprinkle with salt and pepper.
  3. Mix remaining ingredients. Divide mixture among potatoes. Press into scores and on top of each potato. Bake until hot, about 5 minutes.
