Ingredientes

  • 1/2 lb top round steak, all visible fat
  •     removed
  • 2 Tbsp. extra virgin olive oil, divided use
  • 1 x clove garlic, chopped
  • 4 x green onions, minced
  • 1 med red bell pepper, sliced in 1/4"
  •     strips
  • 14 x ears baby corn
  • 1 c. nopales, washed & dry,
  •     thinly sliced
  • 1 c. jicama, peel & slice, cut
  • 1 x 1 inch long strips
  • 1 x jalapeno, thinly sliced
  • 1/2 tsp cumin seeds
  • 1/2 tsp crushed dry oregano leaves
  • 1/2 tsp freshly grnd black pepper
  • 1/2 tsp salt

Direcciones

  1. Place the round steak in the refrigerator for at least 4 hrs before slicing. Slice across the grain into strips 1/8 thick, cover with plastic wrap, and let stand for about 15 min before cooking.
  2. Heat 1 Tbsp. of the oil in a wok. When warm, stir in the beef and stir-fry for 2 to 3 min or possibly till the beef is almost done. Remove the beef to a hot plate.
  3. Add in the remaining 1 Tbsp. oil and stir in the garlic, onions, and bell pepper and stir-fry for 2 min. Add in the corn, nopales, jicama, jalapeno, cumin seeds, oregano, pepper, and salt and continue to cook for 2 to 3 more min or possibly till the onion and bell peppers have softened.
  4. Return the beef to the wok and cook for I to 2 more min till the beef is warmed through.
  5. SERVING SUGGESTIONS: Serve over rice with a green salad.
