%20for%20me%20and%20I%20asked%20him%20to%20save%20me%20the%20livers.%20He%20asked%20me%20if%20I%20was%20%22feeling%20a%20little%20jumpy%22%20to%20which%20I%20replied%20%22keep%20using%20puns%20like%20that%20and%20I'll%20have%20to%20shop%20somewhere%20else%22.%20I%20also%20got%20a%20bit%20of%20bacon%20and%20some%20of%20their%20amazing%20pork%20meat%20sticks%20that%20I%20need%20for%20my%20pork%20deficiency.%20I%20also%20picked%20up%20my%20snails%20from%20Delaurentis%20next%20door.%20I%20found%20a%20recipe%20for%20snails%20that%20said%20%22go%20outside%20and%20collect%2020%20garden%20snails%22.%20Uhhh,%20not%20in%20my%20neighborhood%20friend.%20I'll%20stick%20with%20canned%20snails.%20After%20collecting%20all%20my%20ingredients%20I%20went%20home%20and%20started%20on%20dinner.%20I%20finally%20got%20to%20use%20my%20lovely%20new%20friend.%20My%20pink%20Kitchen-aid%20mixer%20with%20meat%20grinder%20attachment%20that%20my%20sweetheart%20wifey%20got%20me%20for%20my%20birthday.%20I%20loved%20how%20upset%20the%20cat%20got%20while%20watching%20the%20rabbit%20meat%20squish%20out%20of%20the%20grinder.%20Both%20my%20kitty%20Clara%20and%20K%20were%20intrigued%20and%20repulsed%20at%20the%20same%20time.%3C/p%3E%3Cp%3EThe%20rabbit%20terrine%20was%20incredible.%20A%20mixture%20of%20ground%20rabbit%20meat%20and%20liver,%20garlic,%20onion,%20egg,%20and%20spices.%20All%20wrapped%20up%20with%20bacon%20and%20steamed%20in%20a%20terrine%20water%20bath%20for%201%201/2%20hours.%20It%20was%20like%20eating%20the%20most%20moist%20meatloaf%20you%20ever%20had%20in%20your%20life.%20If%20there%20was%20a%20god%20of%20meatloaf,%20this%20is%20what%20she%20would%20make.%20It%20went%20perfectly%20with%20the%20sofrito%20sauce.%20A%20super%20smokey%20and%20spicy%20tomato%20sauce%20with%20pimenton%20(smoked%20paprika)%20and%20sweet%20onions.%20I%20always%20make%20Cuban%20sofrito%20as%20the%20base%20for%20soups%20and%20sauces%20but%20I%20have%20never%20thought%20of%20the%20addition%20of%20pimenton.%20I%20don't%20know%20why,%20it%20makes%20perfect%20sense.%20This%20will%20be%20my%20%22go%20to%22%20sofrito%20from%20now%20on.%20We%20ate%20the%20terrine%20the%20next%20day%20in%20sandwiches.%20So%20stinking%20good!%3C/p%3E%3Cp%3EWho%20doesn't%20love%20potato%20pancakes?%20Unloved%20demon%20spawn,%20that's%20who.%20Trinxat%20(pronounced%20trin-chat),%20Andorra's%20national%20dish%20of%20potatoes,%20cabbage,%20and%20bacon%20all%20fried%20up%20in%20patty%20form,%20is%20comfort%20food%20pure%20and%20simple.%20K%20is%20half%20Irish%20and%20I%20make%20a%20dish%20called%20colcannon%20for%20her%20when%20she's%20not%20shining%20shoes%20or%20following%20rainbows.%20It's%20basically%20the%20same%20ingredients%20as%20trinxat%20but%20the%20Andorrans%20here%20have%20stepped%20it%20up%20a%20notch%20(as%20my%20favorite%20uneducated%20TV%20celebrity%20leprechaun%20would%20say)%20and%20fried%20the%20whole%20thing.%3C/p%3E%3Cp%3ESnails%20are%20a%20hard%20sell%20to%20people%20that%20have%20never%20tried%20them%20before.%20Getting%20someone%20to%20try%20snails%20for%20the%20first%20time%20can%20be%20a%20daunting%20task.%20%22Here,%20I%20cooked%20you%20some%20slimy%20insect%20looking%20creatures,%20have%20some.%22%20Snails%20are%20mollusks.%20If%20you%20like%20clams,%20oysters,%20mussels,%20etc...%20you%20will%20like%20snails.%20It's%20a%20texture%20thing%20that%20most%20people%20have%20a%20problem%20with.%20To%20me,%20snails%20have%20similar%20texture%20and%20flavor%20to%20a%20portabella%20mushroom%20that%20got%20in%20a%20fight%20with%20a%20clam.%20I%20stuffed%20the%20snails%20back%20into%20their%20shells%20and%20topped%20them%20off%20with%20some%20garlic%20and%20chive%20butter%20and%20roasted%20them%20for%2010%20minutes.%20They%20were%20garlicky%20and%20delicious.%3C/p%3E%3Cp%3EFood%20does%20not%20have%20to%20be%20filled%20with%20chemicals%20just%20to%20be%20comforting.%20Food%20should%20be%20made%20with%20care%20and%20pride(call%20me%20a%20hippy%20and%20I'll%20hurt%20you).%20And%20perhaps%20sometimes%20you%20need%20to%20get%20a%20little%20challenged.%20Eating%20and%20traveling%20shouldn't%20just%20be%20about%20familiarity.%20It%20should%20show%20you%20new%20and%20exciting%20things%20so%20that%20when%20you%20want%20some%20of%20your%20favorites,%20you'll%20have%20a%20whole%20lot%20more%20to%20choose%20from.%3C/p%3E%3Cp%3EFor%20more%20info%20on%20this%20project,%20read%20this:%20203%20Sovereign%20States%3C/p%3E){kind=link}
