%20and%20we%20both%20fell%20in%20love%20with%20this%20salmon%20dish.%3C/p%3E%3Cp%3EHave%20I%20ever%20told%20you%20about%20our%20year%20in%20Halifax?%20How%20we%20got%20together%20as%20a%20summer%20fling%20at%20home%20in%20Toronto%20(I%20had%20no%20interest%20in%20anything%20serious%20knowing%20I%20was%20returning%20to%20school%20in%20Nova%20Scotia)%20and%20then,%20come%20September,%20SeaBass%20totally%20followed%20me%20out%20east...at%20which%20point%20I%20couldn't%20seem%20to%20get%20rid%20of%20him.%20So%20we%20moved%20in%20together%20after%20approximately%20three%20months%20of%20dating%20and%20five%20years%20later%20here%20we%20are.%20Still%20stuck%20together.%3C/p%3E%3Cp%3EIt's%20a%20love%20story%20for%20the%20ages%20really.%3C/p%3E%3Cp%3EAnyhoo,%20since%20that%20birthday%20celebration%20I've%20come%20back%20to%20this%20salmon%20recipe%20time%20and%20time%20again.%20It%20has%20good%20memories%20attached%20to%20it%20but%20mostly%20it's%20just%20damned%20tasty.%20The%20salmon%20is%20sauteed%20in%20soy%20sauce%20in%20lemon%20juice,%20making%20it%20salty%20and%20sweet%20and%20tangy%20all%20at%20once.%20The%20tender,%20flaky%20flesh%20of%20the%20salmon%20absorbs%20the%20flavours%20of%20the%20soy%20and%20lemon%20but%20holds%20on%20to%20its%20own%20character%20at%20the%20same%20time.%3C/p%3E%3Cp%3EThe%20shitake%20mushrooms%20are%20prepared%20basically%20the%20same%20way,%20sliced%20and%20then%20sauteed%20in%20soy%20and%20lemon,%20with%20a%20little%20butter%20thrown%20in%20at%20the%20last%20minute%20if%20you're%20feeling%20indulgent.%3C/p%3E%3Cp%3EThis%20is%20one%20of%20my%20more%20interpretive%20recipes%20-%20mostly%20because%20it's%20never%20actually%20occurred%20to%20me%20to%20stop%20and%20measure%20out%20the%20amount%20of%20soy%20sauce%20that%20I'm%20using%20-%20but%20also%20because%20I%20personally%20like%20my%20salmon%20heavier%20on%20the%20lemon%20that%20SeaBass%20does.%3C/p%3E%3Cp%3EHe's%20salty,%20I'm%20tangy.%20We%20balance%20each%20other%20out.%3C/p%3E%3Cp%3ESo,%20here's%20the%20loose%20recipe.%20Please%20play%20with%20it%20and%20make%20it%20work%20for%20you.%3C/p%3E%3Cp%3EHeat%20saute%20pan%20with%201/2%20tbsp%20olive%20oil.%3C/p%3E%3Cp%3EAdd%20minced%20garlic.%3C/p%3E%3Cp%3EAdd%20salmon.%3C/p%3E%3Cp%3EPour%201/2%20cup-3/4%20cup%20soy%20sauce%20over%20salmon%20and%20into%20saute%20pan.%3C/p%3E%3Cp%3EAdd%20juice%20from%201%20lemon.%3C/p%3E%3Cp%3ESaute%20salmon%20on%20med.%20heat%20for%20approx%205%20mins%20on%20one%20side.%3C/p%3E%3Cp%3EWatch%20soy%20and%20lemon%20juice%20to%20%20ensure%20it%20is%20not%20cooking%20down%20too%20much%20-%20you%20want%20to%20stay%20very%20liquid%20in%20the%20pan.%3C/p%3E%3Cp%3EAdd%20more%20soy%20and%20lemon%20if%20necessary%20-%20taste%20to%20be%20sure%20you're%20happy%20with%20the%20combination.%3C/p%3E%3Cp%3ETurn%20salmon%20over%20and%20continue%20to%20saute%20until%20cooked%20through.%3C/p%3E%3Cp%3EAllow%20the%20soy%20and%20lemon%20juices%20to%20cook%20down%20at%20this%20point.%3C/p%3E%3Cp%3ESpoon%20the%20thickening%20liquid%20over%20top%20of%20the%20salmon%20as%20it%20is%20thickening.%3C/p%3E%3Cp%3ERemove%20salmon%20from%20pan.%3C/p%3E%3Cp%3EMushrooms%3C/p%3E%3Cp%3ESlice%20shitakes.%3C/p%3E%3Cp%3EHeat%20saute%20pan%20with%201/2%20tbsp%20olive%20oil.%3C/p%3E%3Cp%3EAdd%20mushrooms%20to%20pan.%3C/p%3E%3Cp%3EAdd%20remaining%20soy%20sauce%20and%20lemon%20juice%20to%20pan.%3C/p%3E%3Cp%3ESaute%20mushrooms%20until%20cooked%20through.%3C/p%3E%3Cp%3EServe%20with%20salmon.%3C/p%3E){kind=link}
