Spaghetti and Meatball Soup

Spaghetti and Meatballs in a hearty soup. Perfect for cold winter nights!

Ingredientes

  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 Tbls olive oil
  • 42 oz chicken broth
  • 24 oz marinara sauce
  • 1/2 tsp Italian seasoning
  • 6 oz thin spaghetti, broken into small pieces
  • 1 pound mini meatballs (favorite recipe, or see below)
  • Salt and Pepper to taste
  • Meatballs
  • 1 lb ground beef
  • 1/2 cup bread crumbs or crushed saltine crackers
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 egg

Direcciones

  1. In a large pot heat olive oil. Add onions and garlic and saute over medium heat until soft. Add chicken broth, marinara sauce and Italian Seasoning. Bring to a boil. Add spaghetti and meatballs, and cook until the noodles are done. Season with salt and pepper to taste.

  3. Mix everything together and form into mini meatballs. Bake at 350 for about 15 minutes, depending on size.
