Spaghetti con i gamberoni

This was supposed to be vongole, but the fishmonger only had 10 left. Seeing he had some good prawns (gamberoni), I decided to go for this based on a classic Sicilian recipe and it is immensely simple to make. The pasta is savoury, cutting through the sweetness of the prawns.
Spaghetti con i gamberoni
Serves 2
- 200gms of spaghetti
- 20 or so cherry tomatoes, remove the core at least
- a clove of garlic, chopped finely
- a couple of fresh red chillies, de-seeded and chopped finely
- a good sprinkle of parsley, chopped finely
- a glass of white wine
Do all your prep – dice the tomatoes – remove the skins and de-seed if you want), chop the parsley and chillies nice and fine.
Put on your spaghetti (salt the water heavily)…
Get the prawns on a medium high heat in olive oil with some garlic, chilli and tomato segments. When they are broadly done and are the slightest bit browned on the shell, pour in a glass of wine and cook off the alcohol. Lift the prawns out and reduce the sauce slowly. When the pasta is cooked, slop it into the sauce and mix well, add the prawns to warm through, and serve.
