%3C/p%3E%3Cp%3ENow%20last%20night%20we%20had%20been%20planning%20on%20going%20out%20and%20eating%20,%20but%20the%20climate%20wasn't%20so%20great%20and%20my%3C/p%3E%3Cp%3E6.5%20month%20old%20keeps%20me%20busy%20,%20so%20instead%20I%20thought%20of%20making%20a%20similar%20version%20of%20the%20stir-fry%20with%20whatever%20I%20had%20at%20home.%3C/p%3E%3Cp%3EI%20had%20some%20Spaghetti%20Rigati%20,%20which%20is%20a%20sophisticated%20version%20of%20the%20actual%20spaghetti%20in%20the%20sense%20that%20it%20has%20grooves%20on%20its%20sides,%20which%20perfectly%20helps%20in%20coating%20the%20sauce%20better%20on%20the%20pasta.%20Then%20I%20had%20all%20the%20good%20veggies%20and%20for%20my%20protein%20I%20used%20Paneer%20(%20Indian%20Cottage%20cheese),%20which%20is%20my%20favorite...yumm!!%3C/p%3E%3Cp%3EI%20had%20Thai%20Red%20curry%20paste%20brought%20from%20the%20store%20and%20coconut%20milk%20and%20Thats%20all%20you%20need!!!%3C/p%3E%3Cp%3EThis%20recipe%20makes%20enough%20pasta%20for%202-3%20people.%3C/p%3E%3Cp%3ESpaghetti%20Rigati%20with%20Mixed%20Veggies%20&%20Paneer%20in%20Thai%20Red%20curry%20sauce%20Recipe%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3ESpaghetti%20Rigati%20-%201/2%20lb%20(%20I%20used%20Barilla)%20-%20You%20can%20use%20any%20pasta%20you%20like%3C/p%3E%3Cp%3EHot%20boiling%20water%20-%20to%20cook%20the%20pasta%3C/p%3E%3Cp%3EMixed%20Veggies%20-%202-3%20cups%20(%20I%20used%20frozen%20mixed%20veggies%20containing%20-%20Brocolli,%20Baby%20corn,%20Carrots,%20Red%20peppers,%20Onion,%20Beans,%20Sugar%20snap%20peas,%20Mushroom%20and%20Water%20chestnuts)%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20In%20a%20large%20pot%20keep%20some%20water%20to%20boil%20and%20when%20it%20starts%20bubbling%20add%20enough%20salt%20to%20season%20the%20spaghetti%20and%20add%20the%20Spaghetti.%20(Cook%20the%20pasta%20as%20per%20packet%20instructions.)%3C/p%3E%3Cp%3E2.%20Meanwhile,%20heat%20a%20non-stick%20kadai%20or%20skillet%20on%20medium%20heat%20and%20add%20the%201tblsp%20of%20oil.%20When%20it%20gets%20hot%20add%20the%20cubed%20Paneer%20(Indian%20cottage%20cheese)%20and%20saute%20until%20it%20gets%20mildly%20browned%20on%20both%20sides%20or%20atleast%20on%20one%20side.%3C/p%3E%3Cp%3E3.%20Keep%20the%20Paneer%20aside%20in%20a%20bowl%20and%20add%20the%20mixed%20veggies%20to%20the%20skillet%20and%20saute%20for%20just%201-2%20minutes.%20Keep%20the%20veggies%20aside.%20(You%20do%20not%20want%20the%20veggies%20to%20be%20over%20cooked,%20it%20should%20still%20be%20crunchy)%3C/p%3E%3Cp%3E4.%20Now%20reduce%20the%20heat,%20and%20add%20the%20coconut%20milk%20and%20the%20Thai%20Red%20curry%20paste%20and%20stir%20for%20a%20while%20until%20the%20sauce%20thickens.%20Season%20with%20salt%20as%20needed.%20[You%20may%20also%20add%20some%20red%20chilli%20flakes%20and%20minced%20ginger%20at%20this%20point.%20I%20did%20not%20add%20both%20but%20I%20wish%20I%20had,%20it%20would%20definitely%20elevate%20the%20taste].%3C/p%3E%3Cp%3E5.%20Toss%20in%20the%20veggies%20and%20paneer%20and%20stir%20well.%3C/p%3E%3Cp%3E6.%20By%20now%20the%20pasta%20should%20be%20done,%20when%20its%20al%20dente%20,%20drain%20away%20the%20pasta%20water%20and%20add%20the%20pasta%20directly%20to%20the%20Thai%20red%20curry%20sauce%20and%20veggies.%20Coat%20the%20pasta%20well%20with%20the%20sauce%20and%20cover%20and%20cook%20for%20%202-3%20minutes.%20Serve%20hot!%3C/p%3E%3Cp%3ESuggestions:%3C/p%3E%3Cp%3Ea.%20Like%20I%20mentioned%20some%20red%20chilli%20flakes%20and%20ginger%20would%20add%20some%20spice%20to%20the%20dish%20for%20those%20who%20like%20a%20bit%20of%20spice.%3C/p%3E%3Cp%3Eb.%20If%20you%20want%20%20the%20sauce%20to%20get%20dried%20up%20with%20the%20pasta,%20keep%20cooking%20the%20pasta%20in%20the%20sauce%20till%20the%20pasta%20drinks%20up%20or%20coats%20up%20all%20the%20sauce%20on%20the%20pasta.%20[%20This%20is%20how%20I%20have%20prepared%20here%20]%3C/p%3E%3Cp%3Ec.%20If%20you'd%20like%20some%20sauce%20with%20the%20pasta%20(%20like%20a%20soggy%20pasta)%20,%20just%20cook%20the%20pasta%20with%20the%20sauce%20for%20few%20minutes%20and%20turn%20off%20the%20heat%20and%20serve%20immediately.%20The%20more%20time%20the%20pasta%20sits%20in%20the%20sauce%20the%20more%20it%20gets%20absorbed%20into%20the%20pasta.%20[%20I%20would%20have%20preferred%20this%20,%20as%20it%20would%20make%20the%20pasta%20more%20juicy%20:-)%20]%3C/p%3E%3Cp%3Ed.%20You%20can%20use%20Chicken%20,%20Beef%20,%20Egg%20,%20Tofu%20etc%20for%20the%20protein%20instead%20of%20Paneer%20if%20you'd%20like.%3C/p%3E%3Cp%3EThe%20pasta%20turned%20out%20absolutely%20great%20and%20my%20hus%20was%20asking%20for%20seconds%20and%20thirds.%20:-)%20It%20was%20creamy%20and%20had%20a%20perfect%20Thai%20Red%20curry%20taste%20and%20had%20all%20the%20veggies%20to%20make%20u%20feel%20like%20we%20ate%20something%20healthy,%20the%20Paneer%20was%20a%20real%20treat.%3C/p%3E%3Cp%3ENow%20I%20have%20my%20own%20little%20restaurant%20style%20dish%20with%20my%20own%20unique%20taste.%20I%20added%20lots%20of%20veggies%20and%20less%20pasta%20to%20make%20i
