Receta Spaghetti Squash with Clams
Usually served with linguine, this Spaghetti Squash With Clams is amazingly delicious.
Spaghetti Squash with Clams

- 2 pounds spaghetti squash (makes about 5 cups of “spaghetti”)
- 1½ tablespoons olive oil
- 1 large shallot, chopped
- 2 cloves garlic, minced
- ¼ cup finely chopped fresh parsley, divided
- 24 Little neck clams
- ½ cup dry white wine or water
- ⅛ cup clam juice
- ⅛ teaspoon red pepper flakes
- Optional: Fresh squeezed lemon juice
Preheat oven to 350°.
Wash squash and pierce with fork several times.
Bake for 1 hour or until squash is fork-tender. Let cool.
In a medium-sized skillet, sauté the onion and garlic in olive oil for about two minutes.
Start a pot of water to boil.
Add half of the parsley, the wine or water and clam juice.
Bring sauce to a boil, then simmer about five minutes.
Add the clams to the boiling water and cover, for about two minutes or until the clams open up. Add to the pan of clam sauce.
Cut the squash in half lengthwise .
Using a fork, prepare the “spaghetti” by raking the squash strands down to the skin.
Place squash in serving bowl; add clam sauce and toss well.
Sprinkle with remaining parsley and red pepper flakes.
Add freshly squeezed lemon juice if desired

How could I not? When I made my Miso Clam Chowder last week, I started thinking about linguine with clams. It’s got to be one of my all-time favorite dishes. But, I really don’t need the extra carbs all the time.
That’s when I realized that I can use spaghetti squash for this dish.
Believe it or not, the first time I tried spaghetti squash I was in my 30′s. A friend of mine served it at a dinner party. Um, no thank you. She was shocked. I told her that I would give it a try, but doubted I would like it. She served it with marinara sauce and I was right. I didn’t like it.
Fast forward many years later…
I decided to give this veggie another try and made spaghetti squash carbonara. I loved it.
I loved this one just as much as the carbonara dish. Go on, give it a try. don’t like clams? Make a shrimp scampi instead. That give me an idea.
