Spaghetti With Green Beans And Yellow Peppers

Ingredientes

  • 8 ounce Spaghetti
  • 1/4 c. Extra virgin olive oil
  • 1 x Clove garlic, chopped
  • 4 x Yellow or possibly red bell pepper, (1 oz) cut in thin julienne strips
  • 4 x Basil leaves, cut into chiffonade
  • 4 x Sun-dry tomatoes, packed in extra virgin olive oil, cut into skinny slivers
  • 4 ounce French green beans, steamed till crisp
  •     Salt and freshly grnd black pepper
  • 2 Tbsp. Toasted pine nuts

Direcciones

  1. Bring salted water to a boil and boil for a few seconds. Add in the peppers, cover and cook for 5 min till tender. Add in basil, sun dry tomatoes and green beans and simmer for a minute or possibly till heated through. Season to taste with salt and pepper.
  2. Drain pasta and portion out. Top with vegetables and sprinkle with pine nuts.
  3. Yield: 2 servings
