%20Our%20current%20apartment%20has%20been%20on%20the%20market%20since%20September,%20and%20while%20there%20hasn%E2%80%99t%20been%20a%20ton%20of%20activity%20on%20the%20showings%20front,%20we%20knew%20that%20the%20unit%E2%80%99s%20owner%20was%20eager%20to%20sell%20it%20and%20it%20was%20only%20a%20matter%20of%20time%20before%20the%20right%20person%20came%20and%20potentially%20snatch%20it%20from%20under%20us.%20That%20hasn%E2%80%99t%20happened%20yet,%20but%20with%20the%20arrival%20of%20spring%20we%20know%20that%20the%20listing%20agent%20will%20try%20to%20get%20more%20people%20to%20see%20the%20place%20now%20that%20we%E2%80%99re%20leaving.%20It%20was%20way%20too%20rich%20for%20our%20blood%20(I%20didn%E2%80%99t%20want%20to%20become%20house-poor%20on%20a%20place%20with%20no%20walls%20and%20no%20cable%20connection%20for%20high-speed%20internet)%20and%20while%20it%20has%20been%20fun%20as%20a%20rental,%20I%20had%20little%20interest%20in%20owning.%3C/p%3E%3Cp%3E2.)%20The%20place%20we%E2%80%99re%20buying%20is%20directly%20underneath%20our%20current%20place,%20and%20far%20more%20affordable.%20It%20also%20has%20more%20walls,%20and%20discrete%20rooms,%20and%20that%20all-important%20cable%20connection%E2%80%93we%20already%20have%20the%20installation%20box%20from%20Comcast%20ready%20and%20raring%20to%20go.%20It%E2%80%99s%20smaller%20and%20we%E2%80%99re%20going%20to%20have%20to%20try%20some%20things%20out%20to%20put%20everything%20in%20their%20places,%20but%20we%20still%20have%2014-foot%20ceilings%20so%20it%20will%20all%20feel%20slightly%20more%20reasonable.%3C/p%3E%3Cp%3EIt%E2%80%99s%20funny%E2%80%93the%20unit%20went%20on%20the%20market%20the%20day%20after%20the%20second%20showing%20of%20our%20current%20place,%20and%20this%20is%20a%20good%20approximation%20of%20the%20subtlety%20and%20restraint%20we%20exercised%20in%20jumping%20on%20the%20opportunity:%3C/p%3E%3Cp%3EI%E2%80%99m%20so%20excited,%20you%20guys.%20It%E2%80%99s%20in%20great%20shape%20so%20it%20doesn%E2%80%99t%20need%20a%20lot%20of%20big%20work%20right%20away,%20but%20naturally%20we%E2%80%99re%20starting%20to%20make%20a%20list%20of%20all%20of%20the%20projects%20we%E2%80%99d%20like%20to%20do.%20Since%20we%20have%20about%20three%20weeks%20of%20overlap%20in%20both%20places%20I%E2%80%99m%20hoping%20to%20get%20some%20painting%20done,%20and%20Michael%20wants%20to%20build%20a%20pantry%20in%20the%20kitchen%20with%20some%20shelving,%20and%20I%20want%20to%20do%20a%20swap%20out%20of%20shower%20heads.%20Later%20down%20the%20road%20we%20want%20to%20install%20a%20counter%20on%20the%20kitchen%20peninsula%20(I%20don%E2%80%99t%20understand%20why%20the%20original%20builders%20of%20these%20units%20didn%E2%80%99t%20install%20them,%20but%20whatever)%20so%20people%20can%20actually%20sit%20on%20our%20stools%20and%20eat%20from%20the%20bar%20and%20we%20have%20a%20killer%20tiling%20project%20in%20mind.%20I%20promise%20this%20won%E2%80%99t%20become%20a%20home%20decor/DIY%20blog,%20but%20I%20may%20share%20some%20photos%20of%20projects%20we%E2%80%99re%20working%20on%20from%20time%20to%20time.%3C/p%3E%3Cp%3EDuring%20the%20two-ish%20months%20of%20being%20under%20contract%20writing%20here%20and%20cooking%20have%20definitely%20helped%20to%20keep%20me%20somewhat%20stable%20as%20I%20had%20an%20outlet%20in%20which%20to%20channel%20all%20of%20my%20house-buying%20anxiety.%20I%E2%80%99ve%20even%20done%20a%20little%20experimenting,%20as%20evidenced%20by%20this%20sage%20and%20sausage%20pasta%20with%20butter:%20I%20made%20it%20back%20in%20the%20wintertime%20when%20I%20was%20craving%20something%20warm%20and%20comforting%20and%20it%20came%20out%20really%20well,%20so%20I%20wanted%20to%20try%20it%20one%20more%20time%20to%20a.)%20get%20a%20better%20shot%20of%20it%20in%20natural%20light%20and%20b.)%20write%20down%20the%20ingredients%20so%20I%20could%20remember%20exactly%20how%20much%20I%20used%20of%20everything.%20It%E2%80%99s%20a%20pretty%20fast%20dish%20to%20bring%20together:%20the%20main%20thing%20is%20you%20have%20to%20cook%20the%20sausages%20most%20of%20the%20way%20through,%20and%20then%20take%20them%20out%20and%20melt%20down%20the%20butter%20and%20add%20the%20sage,%20pasta,%20and%20cheese.%20You%20could%20even%20turn%20this%20into%20a%20brown%20butter%20sauce%20if%20you%20had%20the%20inclination;%20just%20let%20the%20butter%20go%20longer%20until%20it%20starts%20to%20get%20that%20brown%20(but%20not%20too%20brown!)%20color%20before%20removing%20it%20from%20the%20heat.%20I%20also%20found%20myself%20really%20liking%20the%20sage%20as%20softer%20leaves%20all%20blended%20with%20the%20pasta,%20but%20if%20you%20felt%20like%20frying%20them%20ahead%20of%20time%20that%20would%20be%20tasty%20too.%3C/p%3E%3Cp%3EIt%E2%80%99s%20kind%20of%20the%20perfect%20dish%20to%20be%20enjoying%20right%20now%20since%20the%20weather%20wants%20to%20give%20us%20some%20winter%20weather%20now%20that%20we%E2%80%99re%20in%20April;%20when%20I%E2%80%99m%20feeling%20more%20optimisticI%20try%20to%20think%20of%20this%20as%20our%20last%20chance%20to%20make%20some%20warm%20comfort%20foods%20before%20we%20give%20way%20to%20hot%20summer%20nights%20and%20not%20even%20wanting%20to%20look%20at%20the%20stove.%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20water%20to%20a%20boil.%20While%20the%20water%20heats%20up,%20add%20a%20little%20olive%20oil%20to%20a%20large%20saute%20pan%20and%20bring%20to%20medium-high%20heat.%20Add%20the%20sausage,%20breaking%20it%20down%20into%20smaller%20pieces%20and%20cooking%20it%20through%20until%20the%20pieces%20are%20no%20longer%20pink.%20Remove%20with%20a%20spider%20and%20let%20drain%20on%20a%20plate%20lined%20with%20paper%20towels.%3C/p%3E%3Cp%3ESalt%20the%20water%20(a%20good%20tablespoon%20or%20so%20is%20enough)%20and%20add%20the%20pasta;%20while%20it%E2%80%99s%20cooking%20add%20the%20butter%20to%20the%20saute%20pan%20and%20melt%20over%20medium%20heat.%20When%20fully%20melted,%20add%20the%20sage%20leaves,%20let%20them%20cook%20for%20a%20minute%20or%20two%20and%20take%20off%20the%20heat.%20Add%20the%20sausage%20back%20into%20the%20pan%3C/p%3E%3Cp%3EReserve%20a%20cup%20of%20the%20cooking%20water%20from%20the%20pasta,%20and%20when%20the%20pasta%20is%20just%20about%20al%20dente,%20drain%20and%20add%20it%20to%20the%20pan%20with%20the%20butter%20and%20put%20it%20on%20medium%20heat.%20Using%20tongs,%20toss%20the%20pasta%20well%20to%20coat%20with%20the%20butter%20and%20sage%20and%20sausage,%20and%20slowly%20start%20to%20add%20in%20the%20cheese%20so%20that%20it%20melts%20evenly.%20Add%20a%20little%20pasta%20water%20here%20to%20help%20with%20this%20if%20needed,%20and%20let%20the%20pasta%20cook%20in%20the%20pan%20for%20about%20two%20minutes%20to%20get%20to%20the%20right%20texture.%20Remove%20from%20heat%20and%20serve%20immediately.%3C/p%3E){kind=link}
