Spanikopita ~ Greek Spinach Pita

A very tasting and authentic Greek dish, very simple really and tastes like you have spent hours preparing.

Ingredientes

  • 1 Box Filo dough
  • 2 boxes frozen chopped spinach
  • 1 container 8 oz cream cheese
  • 2 Cups ricotta cheese
  • 4 Oz Feta cheese
  • 3 eggs
  • 1 chopped onion
  • 9 sprigs peppermint
  • dash salt and pepper
  • 1 pound melted butter

Direcciones

  1. Place filo dough to the side and unroll, cover with a paper towel and a damp towel
  2. Melt butter on top of stove in a sauce pan and allow to cool as you put together the filling.
  3. Chop onion finely, as well as the mint. Add other ingredients as you blend with your mixer, crumble feta as you add it and place mixture to the side, Squeeze all the water out of frozen spinach by wrapping it in a kitchen towel, and squeezing tightly, then add to filling.
  4. Butter a large lasagna pan 9 X 24 and begin laying filo, buttering each sheets lightly, lay half the package of filo dough, then pour in all the filling. Cover this with the remaining filo dough, again buttering each sheet. After all sheets are buttered and used, place in a cold refrigerator and allow to cool completely, until you can cut the pita easily. Cut in squares. Place in hot oven 375 for 45 minutes, or until the top is golden brown
