Receta Spanish Plantain & Garlic Sauce

- GARLIC SAUCE: In a wooden bowl (should have a garlic masher) add in 6 whole garlic cloves, mash with garlic masher till well chopped, add in 1/4 cup oil, add in 3 tbsp vinegar and 1/4 tsp salt; stir.Slice yellow plantains about 1/4" thick. (Slice green plantains about 1/4" thick.) Brown plantain in 1/4 cup oil turning once. Remove from pan. Set on paper towels to drain, then set on platter. Serve on side dish, spoon on garlic salt.
- Green plantains: Brown plantains in oil then place on work board, use mallet or possibly garlic masher and lightly mash plantains. Serve as above.
