Spanish rice

This rice was amazing found the recipe on a website called Let's Dish. I changed a few things. Instead of tomato sauce I used tomato bouillon powder and I replaced cayenne pepper with ground cumin. My family raved about the rice.

Ingredientes

  • 2 tbsp butter
  • 1/4 cup diced red onion
  • 1 cup parboiled rice
  • 1 3/4 cup chicken broth
  • 1/4 cup water with 1 tbsp tomato bouillon powder
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1 tsp salt
  • 1/4 tsp chili powder
  • 3 cloves garlic minced
  • 1/4 cup fresh cilantro * optional

Direcciones

  1. In a large saucepan melt butter
  2. Add rice stir constantly until lightly golden
  3. Add onion, garlic and spices
  4. Cook for about 2 minutes longer
  5. Add tomato bouillon and chicken broth
  6. Cook on medium heat for about 25 minutes or until all water is absorbed.
  7. Add cilantro
  8. Serve
