Receta Spanish Salad
A refreshing summer salad made with tomatoes, cucumber and spring onions with with capers and olives.
Ingredients:
- Tomatoes – 8 to 10, finely chopped
- Cucumber – 1, medium, peeled, chopped
- Spring Onions – 1 cup, chopped
- Watercress or Lettuce – 1 cup, chopped
- Black Olives – 4 to 6
- Capers – 3 to 4 tblsp, drained
- For the dressing:
- Red Wine Vinegar – 1/4 cup
- Paprika or Red Chilli Flakes – 2 tsp
- Cumin Powder – 1 tsp
- Olive Oil – 1/4 cup + 2 tblsp
- Garlic – 2 cloves, crushed
- Salt as per taste
- Black Pepper Powder as per taste
Method:
1. Combine the cucumbers, tomatoes and 1/2 cup of spring onions in a bowl.
2. Add the lettuce or watercress, olives and capers.
3. Mix all the dressing ingredients and whisk well.
4. Pour over the salad and toss to combine evenly.
5. Garnish with the remaining spring onions.
