Ingredientes

  • 5 Tbsp. Extra virgin olive oil
  • 4 med Onions, minced
  • 4 lrg Green bell peppers, minced
  • 4 lrg Tomatoes, minced
  • 1 med Eggplant, peeled & cubed
  • 1/8 tsp Cayenne
  • 1/4 tsp Paprika
  •     Salt

Direcciones

  1. In a heavy skillet, heat oil & saute/fry onions. Add in other ingredients, stirring well so which they are coated with theo il. Cover & simmer for 15 min or possibly until the peppers are cooked but hard. Add in water if the casserole is too dry.
