%20Everyone%20loved%20it,%20even%20the%20picky%20ones.%20Behold%20Special%20Chicken.%20It%E2%80%99s%20really%20called%20that%20in%20the%20cookbook,%20we%20did%20not%20make%20it%20up.%3C/p%3E%3Cp%3EThese%20are%20the%20ties%20that%20bind%3C/p%3E%3Cp%3ESpecial%20Chicken%20is%20soy-marinated,%20batter-fried%20chicken%20wings.%20They%20are%20delicious,%20and%20fairly%20easy%20to%20make.%20The%20recipe%20came%20from%20this%20little%20flip%20top%20Chinese%20food%20cookbook%20my%20parents%20have,%20and%20this%20page%20is%20particularly%20well%20used.%3C/p%3E%3Cp%3Ephotographic%20evidence%3C/p%3E%3Cp%3EAs%20I%20have%20mentioned%20before,%20when%20we%20were%20very%20little,%20my%20mom%20did%20a%20lot%20of%20the%20cooking,%20but%20sometime%20during%20my%20%E2%80%98tween%20years%20(I%20think)%20the%20role%20shifted%20to%20my%20dad%20and%20stayed%20there.%20But%20not%20these.%20These%20are%20firmly%20entrenched%20in%20Mom%E2%80%99s%20camp,%20forever%20to%20remain.%20Many%20have%20tried%20to%20duplicate,%20none%20have%20succeeded.%20Truly.%20My%20attempt%20is%20close,%20and%20good%20enough%20for%20those%20who%20don%E2%80%99t%20know,%20but%20%20they%20are%20sub%20par%20by%20comparison.%20The%20littlest%20tried%20them%20for%20Christmas%20and%20says%20they%20were%20enjoyable,%20but%20not%20right.%20As%20far%20as%20I%20know,%20my%20mom%20has%20always%20followed%20the%20recipe%20exactly%20%E2%80%93%20she%E2%80%99s%20never%20told%20me%20otherwise%20%E2%80%93%20but%20maybe%20that%E2%80%99s%20her%20trick.%20If%20we%20can%E2%80%99t%20replicate,%20she%20can%20always%20lure%20us%20home%20with%20the%20original.%3C/p%3E%3Cp%3EThere%20are%20two%20things%20I%20have%20adjusted%20a%20little%20from%20the%20recipe.%20The%20first%20is%20the%20temperature.%20At%20375%20the%20oil%20is%20way%20too%20hot.%20The%20wings%20get%20too%20dark%20and%20the%20batter%20gets%20unpleasant.%20325%20is%20the%20way%20to%20go.%20(I%20am%20not%20sure%20what%20temp%20Mom%20uses,%20since%20she%20doesn%E2%80%99t%20use%20a%20deep%20fry%20thermometer.%20She%20just%20knows%20when%20it%E2%80%99s%20right.)%20The%20recipe%20also%20suggests%20marinating%20the%20chicken%20wings%20for%20an%20hour,%20but%20I%20recommend%20longer.%20All%20day,%20if%20you%E2%80%99ve%20got%20it.%20Marinate%20overnight!%20It%20makes%20this%20a%20delightful%20option%20for%20a%20weekday.%20These%20usually%20meant%20a%20special%20occasion%20for%20us,%20or%20at%20the%20very%20least%20a%20Sunday%20dinner,%20but%20they%20don%E2%80%99t%20have%20to%20be.%20Get%20wild!%20Make%20them%20on%20a%20Tuesday!%20I%20most%20recently%20made%20them%20on%20a%20Wednesday%20at%20the%20behest%20of%20a%20delightful%20house%20guest.%20(The%20word%20is%20spreading!)%20They%20involve%20deep%20frying,%20but%20don%E2%80%99t%20let%20that%20scare%20you.%20It%20doesn%E2%80%99t%20require%20much%20oil,%20especially%20if%20you%20have%20a%20wok.%20(Do%20you%20have%20a%20wok?%20They%20are%20great,%20get%20a%20wok.)%20Make%20sure%20you%20make%20extra,%20because%20the%20joy%20of%20eating%20them%20hot%20just%20ever%20so%20slightly%20trumps%20the%20joy%20of%20eating%20them%20out%20of%20a%20sandwich%20bag%20the%20next%20day%20%E2%80%93%20lunch%20or%20even%20breakfast.%20Doesn%E2%80%99t%20matter%20which.%3C/p%3E%3Cp%3EAnd%20now,%20just%20because%20I%20feel%20like%20it,%20and%20it%E2%80%99s%20fun,%20a%20rundown%20of%20some%20of%20the%20best%20things%20I%E2%80%99ve%20eaten%20in%20Boston%20recently%20and%20some%20of%20my%20favorite%20Boston%20dishes,%20in%20general%20-%3C/p%3E%3Cp%3EA%20cold%20corn%20and%20coconut%20milk%20soup%20from%20East%20By%20Northeast%20%E2%80%93%20revelatory%3C/p%3E%3Cp%3EThe%20whipped%20goat%E2%80%99s%20milk%20feta%20snack%20at%20Tavern%20Road%20is%20one%20of%20my%20favorite%20snacks%20OF%20ALL%20TIME.%20So%20simple%20and%20so%20so%20good.%20(They%20also%20make%20an%20amazing%20risotto%20over%20there.%20Every%20preparation%20has%20been%20great.)%3C/p%3E%3Cp%3EThe%20breakfast%20sandwich%20at%20Clover%20is%20way%20better%20than%20it%20has%20any%20right%20to%20be.%3C/p%3E%3Cp%3EThe%20corn%20dog%20at%20Trina%E2%80%99s%20Starlite%20Lounge%20is%20a%20delight.%3C/p%3E%3Cp%3EThe%20johnnycake%20at%20Neptune%20is%20just%20nonsense%20it%E2%80%99s%20so%20good.%20Seriously,%20mind-blowingly,%20crazy%20crazy%20good.%3C/p%3E%3Cp%3EThe%20classic%20Chinese%20BBQ%20pork%20sandwich%20from%20Bon%20Me%20is%20my%20favorite%20lunch.%3C/p%3E%3Cp%3EThe%20Baloney%20Pony%20sandwich%20at%20the%20Biggie%20Brunch%20at%20Alden%20&%20Harlow%20still%20haunts%20me,%20and%20alas,%20I%20am%20afraid%20I%20will%20never%20get%20to%20enjoy%20it%20again.%20I%E2%80%99ll%20have%20to%20settle%20for%20the%20chicken%20fried%20rabbit%20over%20there.%20Poor%20me.%3C/p%3E%3Cp%3EThe%20burger%20at%20JM%20Curley%E2%80%99s.%20Always%20and%20forever.%3C/p%3E%3Cp%3EThe%20corn%20at%20Toro,%20but%20everyone%20knows%20this.%3C/p%3E%3Cp%3EThe%20tuna%20crudo%20at%20Row%2034.%3C/p%3E%3Cp%3EThere%20are%20others,%20so%20many%20others,%20but%20that%20is%20what%20I%20am%20thinking%20about%20right%20now.%3C/p%3E%3Cp%3Efrying%3C/p%3E%3Cp%3EMix%20all%20the%20marinade%20ingredients%20together%20in%20a%20large%20bowl.%20Add%20the%20chicken%20wing%20pieces,%20stir%20to%20coat,%20and%20marinate%20in%20the%20fridge%20for%20at%20least%20one%20hour%20or%20preferably%20overnight.%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20wok%20or%20another%20high%20sided%20pan%20or%20pot%20to%20325%20degrees.%3C/p%3E%3Cp%3EMix%20the%20batter%20ingredients%20together%20in%20a%20small%20bowl.%20It%20will%20form%20a%20thick%20sticky%20dough,%20and%20won%E2%80%99t%20come%20together%20cohesively,%20but%20that%E2%80%99s%20ok,%20just%20mix%20a%20bit%20until%20the%20ingredients%20are%20starting%20to%20combine.%20Add%20the%20batter%20to%20the%20bowl%20with%20the%20chicken%20and%20stir%20until%20the%20marinade%20and%20the%20batter%20come%20together%20to%20coat%20the%20chicken.%20This%20will%20be%20kind%20of%20a%20sticky%20mess,%20and%20will%20take%20some%20time%20to%20come%20together,%20but%20keep%20stirring%20until%20it%20does.%20The%20batter%20will%20thin%20when%20mixed%20with%20the%20marinade,%20and%20all%20the%20chicken%20pieces%20will%20be%20coated.%3C/p%3E%3Cp%3EDeep%20fry%20the%20chicken%20in%20batches,%20without%20overcrowding,%20until%20the%20pieces%20are%20brown%20and%20crispy%20and%20cooked%20through,%20about%205-6%20minutes.%20Remove%20the%20chicken%20to%20a%20plate%20lined%20with%20a%20paper%20towel%20and%20let%20cool%20slightly%20before%20serving.%20Let%20the%20oil%20come%20back%20to%20temperature%20between%20batches,%20and%20continue%20to%20fry%20until%20all%20the%20chicken%20is%20finished.%20Enjoy!!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
