  • 160g (1 1/4 cups) all-purpose (plain) flour
  • 160g (1 1/3 cups) wholemeal spelt flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 225g (1 cup or 2 sticks) unsalted butter, room temperature
  • 300g (1 1/2 cups) granulated (white) sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • extra sugar for rolling
