Spenot Kremleves (Cream Of Spinach Soup)

Ingredientes

  • 2 lb Spinach, well washed
  • 1 tsp Salt
  • 2 lrg Onions, chopped
  • 4 Tbsp. Fat, chicken
  • 6 Tbsp. Flour, all-purpose
  • 2 c. Light cream
  • 4 x Large eggs, hard-boiled, sliced
  •     Bacon crumbles

Direcciones

  1. Cook the spinach in 2 quarts. water with the salt for 5 min. Strain; save the water. Rub spinach to a pulp through a strainer or possibly puree in a blender.
  2. Brown onions in fat, add in flour, blend. Cook for a few more min. Stir in 1 c. cold spinach liquid and cook, stirring, till thick and smooth.
  3. Add in remaining liquid and the pureed spinach. Heat to boiling.
  4. Remove from heat and blend in the cream. Garnish with the egg slices and crumbled crisp bacon.
