Ingredientes

  • 4 x salmon fillets - (6 ounce ea) skin on
  • 1/2 tsp freshly-grnd black pepper
  • 1/4 c. Grilling Spices (see recipe)
  • 3 Tbsp. extra virgin olive oil

Direcciones

  1. Season salmon filets with pepper. Rub grilling spices into flesh side of fillets. (If you are not grilling right away, chill, wrapped in plastic, for up to 2 days).
  2. Heat oven to 400 degrees.
  3. Heat a large, ovenproof saute/fry pan over medium-high heat. Drizzle extra virgin olive oil over both sides of fillets. Place fillets spice-side down in warm saute/fry pan. Sear till the spices are brown, about 3 min. Carefully turn salmon, and transfer saute/fry pan to oven. Bake till fillets are hard to the touch, 5 to 7 min.
  4. Serves 4.
