Spiced Apple Muffin Cake With Pecan Streusel Topping

Ingredientes

  • 12 ounce Bramley apples, (weight after peeling and coring), minced into 1/2" cubes
  • 4 ounce Butter
  • 10 ounce Plain flour
  • 1 Tbsp. Plus 1 tsp baking pwdr
  • 1/2 tsp Salt
  • 1 x Heaped tsp grnd cinnamon
  • 1 tsp Grnd cloves
  • 1/2 whl nutmeg, grated
  • 2 lrg Large eggs at room temperature
  • 3 ounce Golden brown caster sugar
  • 6 fl ounce Lowfat milk
  • 2 ounce Pecan nuts, roughly minced
  • 3 ounce Self-raising flour
  • 3 ounce Demarara sugar
  • 1 x Round tsp grnd cinnamon
  • 1 ounce Soft butter
  • 1 Tbsp. Cool water

Direcciones

  1. A 9"/23cm springform cake tin, lightly greased and the base lined with silicone paper (parchment)
  2. Preheat oven to 375f/190c/Gas 5.
  3. 1 Put the butter in a small saucepan and heat on a gentle heat. Then, as with all muffin mixtures, sift the dry ingredients twice.
  4. 2 Put the flour, baking pwdr, salt, cinnamon, cloves and grated nutmeg in a sieve, and sieve into a bowl. In a large mixing bowl whisk the Large eggs, sugar and lowfat milk, pour the melted butter into the egg mix and give it a good whisk.
  5. 3 Sift the flour mix again straight in on top of the mix and fold it in using as few folds as possible.
  6. 4 Ignore the lumpy mix you're now faced with, and do not overmix. Mix in the apple and spoon the whole lot into the tin, levelling off the surface.
  7. 5 For the Topping: Add in the flour, sugar and cinnamon to the same bowl, and rub in the butter with your fingertips till crumbly. Sprinkle in the nuts and cool water, and press the mix loosely together. It will still be quite lumpy.
  8. 6 Spoon the topping on the cake surface and bake on the centre shelf of the oven for 1 1/4 hrs, till springy in the centre. Cold the cake in the tin for 30 min before removing the sides.
  9. 7 Slide a palette knife under the base and cold the cake on a wire rack.
  10. Serve as fresh as possible on its own or possibly hot as a dessert with whipped cream, creme fraiche or possibly vanilla ice cream.
