Receta Spiced Carrot and Zucchini Quinoa
Surprise!
That's what went through my mind when I saw my wife had bought quinoa at the supermarket.
I'd seen pictures of quinoa on pinterest, checked out some quinoa recipes but never had the urge to look for it at the store.
To my surprise it ended up finding me.
Quinoa has a neutral flavor like couscous and you cook it the same way which is very easy. What I like about it is you make it taste however you want.
Being a quinoa newbie, I followed a Spiced Carrot and Zucchini Quinoa recipe and added a few of my own tweaks as I went along.
The texture is definitely different. It took a few bites to get used to it but after that I was good!
The funny thing is I ended up liking it more than my wife. Who knows, I might just have to keep an eye out for it next time I'm at the grocery store.

Spiced Carrot and Zucchini Quinoa
Quinoa mixed with tender carrots, zucchini and roasted red peppers.
Prep Time: 10 minutes
Cooking Time: 20 minutes
- 1 cup water
- ½ cup quinoa, rinsed well, drained
- 1/8 tsp salt
- 1 tbsp extra-virgin olive oil
- 1 large carrot, peeled, cut into small cubes
- 1 medium zucchini, trimmed, cut into small cubes
- 1 jarred roasted red pepper, diced
- ½ tbsp paprika
- ½ tsp ground cinnamon
- 1 tbsp freshly squeezed lemon juice
- ¼ cup chopped fresh cilantro
In a medium saucepan, combine water, quinoa and salt. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer until water is absorbed and quinoa is tender, about 20 minutes.
Meanwhile, heat oil in a medium sized skillet over medium heat. Add carrots and cook for 5 minutes. Add zucchini and red pepper and cook for 3 minutes more. Remove from heat.
Mix in paprika and cinnamon. Add cooked quinoa to skillet. Toss to blend. Drizzle with lemon juice and season with salt and pepper. Mix in cilantro and serve.
