Receta Spiced Pumpkin Steel Cut Oats in a Slow Cooker
The weather is getting chilly and the leaves are turning colors, and that means it’s time to take out the slow cooker and get creative! I was happy when I found out that The Recipe Redux challenge for October was to share a healthy recipe using the slow cooker in a non-traditional way (casseroles). So I thought Breakfast!
I just love steel cut oats on a cold morning, but they can take forever to cook and if you aaren’t watching them, they can boil over and make a mess. I don’t know of many people that have time in the morning to watch over a pot of oatmeal. Last year a friend had told me that she cooks her steel cut oats in a slow cooker overnight, and when she wakes up breakfast is ready. Now that was something I had to try! I usually make the oats plain or with some raisons or apples and cinnamon. This time I decided to use some pumpkin puree that I made from a pumpkin that I picked up at a recent pumpkin picking trip. I thought adding some spices to the oats and pumpkin would be a welcomed breakfast on a late October morning, and it was!
Spiced Pumpkin Steel Cut Oats in a Slow Cooker
INGREDIENTS
- 1 Cup Steel Cut Oats
- 4 Cups filtered water
- 1 ½ teaspoons of cinnamon
- ½ teaspoon of ginger
- ½ teaspoon of nutmeg
- 1 Tablespoon maple syrup or honey
- 1 Cup of pumpkin puree
- Chopped walnuts for garnish - optional
INSTRUCTIONS
place ingredients up to chopped walnuts in a slow cooker
stir well
place cover on slow cooker
cook for 6 to 8 hours on low
