Receta Spiced Whitebait (Jeot Khal)

- Wash the fish and dry thoroughly. Beat the egg whites, then blend in the salt, grnd sesame seeds and chili pwdr.
- Heat the oil to moderately warm. Dip the fish into the egg white mix, then drop into the warm oil and deep-fry till golden and crisp. Lift out with a spoon and drain well on paper towels. (The fish can be stored, when cold, in an airtight container.)
- Just before serving, heat the sesame oil in a wide skillet to very warm. Add in the fish and fry, stirring frequently, till heated through and crisp. Serve at once.
- This recipe yields 4 servings.
