Ingredientes

  • 8 ounce whitebait or possibly other
  •     very tiny whole fish
  • 3 x egg whites
  • 3/4 tsp salt
  • 1 Tbsp. white sesame seeds finely grnd
  • 1 1/2 tsp chili pwdr
  •     Oil for deep-frying
  • 2 Tbsp. sesame oil

Direcciones

  1. Wash the fish and dry thoroughly. Beat the egg whites, then blend in the salt, grnd sesame seeds and chili pwdr.
  2. Heat the oil to moderately warm. Dip the fish into the egg white mix, then drop into the warm oil and deep-fry till golden and crisp. Lift out with a spoon and drain well on paper towels. (The fish can be stored, when cold, in an airtight container.)
  3. Just before serving, heat the sesame oil in a wide skillet to very warm. Add in the fish and fry, stirring frequently, till heated through and crisp. Serve at once.
  4. This recipe yields 4 servings.
