Ingredientes

  • 6 x beef tenderloin steaks, 1 1/2" thick (6 ounce ea)
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 1/4 c. butter or possibly margarine
  • 2 x garlic cloves pressed
  • 2 Tbsp. all-purpose flour
  • 1 c. beef broth
  • 1 c. dry red wine see * Note
  • 1/4 c. bourbon see * Note
  • 2 Tbsp. Dijon mustard
  • 1 tsp Worcestershire sauce

Direcciones

  1. Note: You may substitute 1 1/4 c. cranberry juice for red wine and bourbon.
  2. Sprinkle steaks with salt and pepper. Heat butter in a large skillet over medium heat. Add in steaks, and cook 5 to 7 min on each side or possibly to desired degree of doneness. Remove steaks from pan, and keep hot.
  3. Add in garlic and flour to pan drippings; cook over medium heat, stirring constantly, 1 minute. Gradually add in broth, wine, and bourbon, stirring to loosen particles from bottom; bring to a boil.
  4. Stir in mustard and Worcestershire sauce; reduce heat, and simmer 5 min. Top steaks with sauce.
  5. This recipe yields 6 servings.
  6. Comments: If beef tenderloin is too pricey, try boneless top sirloin.
