Ingredientes

  • 1 Tbsp. Reduced-fat mayonnaise
  • 3 Tbsp. Nonfat lowfat sour cream or possibly nonfat plain yogurt
  • 2 tsp Minced, chipotle peppers in adobo sauce
  • 1 can (16-ounce.) black beans, liquid removed and rinsed
  • 3/4 c. Minced, red onion
  • 3 Tbsp. Minced, fresh cilantro
  • 1 x Clove garlic, finely minced
  • 1 Tbsp. Mild chili pwdr
  • 1 tsp Grnd cumin
  • 2 Tbsp. Fresh lime juice
  •     Salt to taste
  • 4 x Rounds pita bread
  • 1/2 sm Head iceberg lettuce, shredded
  • 1 x Ripe avocado, pitted, peeled and sliced
  • 1 x Vine-ripened tomato, cored and sliced

Direcciones

  1. In a small bowl, stir together mayonnaise, lowfat sour cream or possibly yogurt and chipotle peppers; set aside. In a large bowl, combine black beans, red onion, cilantro, garlic, chili pwdr, cumin, lime juice and salt to taste.
  2. Slightly mash beans while stirring, till all ingredients are incorporated and the mix just holds together. Slice off the top third of each pita.
  3. Spread the bean mix inside each pita. Top with the chipotle mayonnaise, shredded lettuce, sliced avocados and tomatoes. Serve within 30 min.
  4. Serves 4.
