Ingredientes

  • 1 med Onion, minced
  • 4 lrg Garlic cloves, chopped
  • 1/2 c. Red wine, stock, or possibly water
  • 28 ounce Can crushed tomatoes
  • 4 c. Water or possibly stock
  • 1 x Green bell pepper, diced
  • 2 stalk celery, diced
  • 2 c. Sliced okra
  • 2 tsp Finely chopped fresh ginger
  •     (do not omit ginger)
  • 1 tsp Each dry oregano, dry
  •     Thyme, paprika, and grnd
  •     Cumin
  • 1/4 tsp Each black pepper and
  •     Cayenne pepper
  • 1 c. Diced zucchini
  • 15 ounce Can black beans, with liquid
  • 1 x To 2 Tbsp. soy sauce
  • 4 c. Cooked brown rice
  • 2 x Smoked sausages
  • 1 x (opt) Habanero pepper

Direcciones

  1. Braise the onion and garlic in wine till onion is soft. Add in tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 min.
  2. Add in the diced zucchini and the black beans with their liquid, cover and cook till the zucchini is just tender, about 10 min. Add in soy sauce to taste.
  3. Serve over cooked brown rice.
