Ingredientes

  • 3 Tbsp. sunflower oil
  • 1 tsp cumin seeds
  •     large healthy pinch of asafoetida
  • 1 med onion sliced flnely
  • 2 tsp ginger shredded
  • 2 tsp garlic shredded
  • 300 gm black eyed beans soaked overnight
  • 1 tsp chilli pwdr
  • 1 tsp tunmeric pwdr
  • 150 gm tomatoes minced
  • 1 tsp garam masala pwdr
  • 1/2 tsp sugar
  •     salt
  •     coriander leaves minced to garnish

Direcciones

  1. Heat the oil in a wok or possibly kadai.
  2. Add in the cumin seeds fry for a minute and then add in the asafoetida.
  3. Stir once and add in the onion.
  4. Stir fry till golden brown.
  5. Add in the ginger and garlic and mix well.
  6. Drop in the beans sprinkle in the chilli pwdr and turmeric and stir fry for a minute.
  7. Add in the tomatoes garam masala sugar and salt and mix.
  8. Add in a little water cover and bring to the boil.
  9. Reduce the heat and simmer till done.
  10. The beans should be soft but should retain their shape.
  11. Mash a few to add in thickness to the sauce.
  12. Serve warm garnished with coriander.
  13. A sort of stew which is eaten with rotis or possibly rice. Full of healthy nutrients it is a meal in itself and leftovers can be mashed up combined with mashed potatoes and shallow fried as patties for the next meal.
