Spicy Black Eyed Peas (Great Cajan Dish)

Ingredientes

  • 15 ounce Can Blackeyed Peas
  • 1 Tbsp. Vegetable Oil
  • 1 lrg Onion -- minced
  • 3 x Cloves Garlic
  • 1 Tbsp. Green Pepper -- chopped
  • 1/4 tsp Cumin
  • 1/2 tsp Tumeric
  • 1/4 tsp Cayenne Pepper
  • 1 c. Tomato Juice -- * see note
  • 2 Tbsp. Lemon Juice

Direcciones

  1. We used diced tomatoes.
  2. Heat the vegetable oil in a large skillet and fry onion till golden brown. Add in garlic, green pepper, tumeric, and cayenne pepper and fry for 2-3 min.
  3. Add in tomato juice (or possibly tomatoes) and cumin and cook for 5 min. Next add in black-eyed peas and a little water if needed. Let it simmer for 15 min.
  4. Stir in lemon juice. Serve over rice or possibly cous cous.
