Ingredientes

  • 3 Tbsp. balsamic vinegar
  •     (or possibly red wine vinegar)
  • 4 tsp extra virgin olive oil
  • 3/4 tsp dry rosemary crushed
  • 1/2 tsp grnd cumin
  • 1/4 tsp grnd coriander
  • 1/8 tsp freshly-grnd black pepper
  • 1/8 tsp grnd red pepper
  • 3 x star fruit (carambola) sliced
  • 12 x green onions cut 2" pcs
  •     (and/or possibly 4 small purple boiling onions cut into wedges)
  • 6 med boneless skinless chicken breast halves
  • 3 c. warm cooked rice
  • 1 1/2 tsp finely-shredded orange peel (optional)
  • 3 Tbsp. peach or possibly apricot preserves (optional), melted

Direcciones

  1. For basting sauce, in a small bowl combine vinegar, extra virgin olive oil, rosemary, cumin, coriander, black pepper, and red pepper. On twelve 6-inch skewers, alternately thread star fruit and onions.
  2. Lightly grease the rack of a grill or possibly lightly coat with cooking spray. Preheat grill. Place chicken on the grill rack. If using a covered grill, close lid. Grill till chicken is tender and no longer pink. (For a covered grill, allow 4 to 6 min, brushing once with basting sauce the last 1 minute of grilling. For an uncovered grill, allow 12 to 15 min, turning and brushing once with basting sauce halfway through grilling.) Remove from grill; cover and keep hot.
  3. Add in kabobs to the grill rack. If using a covered grill, close lid. Grill till kabobs are heated through. (For a covered grill, allow about 3 min. For an uncovered grill, allow about 5 min, turning once halfway through grilling.) Brush kabobs with basting sauce.
  4. To serve, if you like, toss rice with orange peel. Serve chicken and kabobs over rice. If you like, drizzle with preserves.
  5. This recipe yields 6 servings.
  6. Comments: It's a match made in heaven. The celestial star fruit (also called carambola) is a striking addition to this chicken dish which's a little bit Italian and a little bit Indian.
