Never Miss a Recipe!

Let's Dig In!

It’s a critical time for all you college and university students out there who are studying like crazy trying to ace or just pass your exams. Your brain is probably working overtime so it's a good time to fuel it with something nutritious instead of pizza. A good-for-ya meal will go a long way to having that little puppy retaining and regurgitating information like a song.

Thankfully this Spicy Chicken Stir-Fry doesn't require much time to make and it's full of brain powering nutrition! It contains little fat, it’s full of protein and the amount of vitamins you'll get is off the hook thanks to the colorful snow peas and carrots!

It’s a one-wok dish making clean up fast so you can get right back to studying. Now go give your brain something good to feast on and kick ass on those exams!

Hip Cooking Tip – Chili Garlic Sauce can be found in the international aisle of most grocery stores. Don’t have any? No worries…use 1 tbsp barbecue sauce, 2 cloves minced garlic and ¼ tsp hot sauce or red pepper flakes as a substitute.

Song Suggestion – Some say listening to Mozart makes you smarter. I say it just puts you to sleep. It's tough studying when you're feeling drowsy. While cooking, give yourself an extra brain boost by listening to Audioslave’s “Light My Way”. It has a positive message (which is welcome during exams) and the song will absolutely rock your face off! It'll wake you up much more than a cup of coffee! You'll be fired-up, fueled-up and ready to hit the books. Good luck!

What type of food and/or song gives you a boost when you need it?

Lyrics

In a small bowl, whisk together plum sauce, soy sauce, chili garlic sauce and lime juice.

In a medium bowl, lightly season chicken with salt and pepper. Mix in 2 tbsp of sauce mixture. Reserve remaining sauce.

In a non-stick wok, heat oil over medium-high heat. Add chicken. Cook and stir until chicken is lightly browned and no longer pink in the center, about 4 or 5 minutes. Transfer chicken to a medium bowl and set aside.

Add carrots and snow peas to wok. Cook over medium-high heat until vegetables begin to soften, about 3 or 4 minutes. Return chicken to wok along with green onions. Cook and stir for 1 minute. Add remaining sauce. Cook and stir until chicken and vegetables are coated in sauce. Serve on its own or over a hot bed of rice or noodles.

Volume: Makes 4 servings
