The best part of summer has to be grilling and having the excuse to indulge in anything you can cook up on the grill such as steaks, hamburgers, kebobs, grilled chicken – you name it! My husband obsesses all week long about what he’ll be cooking up on his fancy charcoal grill on the weekend. (He actually watches videos!) So I try to come up with a side dish recipe to compliment what he’s cooking.

Lately, I’ve been obsessing over coleslaw. I’ve order coleslaw in fancy restaurants to see how trendy Southern chefs are experimenting with this classic side dish. Are they adding kimchee or other kinds of pickled vegetables?

I’ve also had vinegary coleslaws at my local barbecue joint (not my favorite, though my husband liked it). A local grocery store sells an “Amish coleslaw” that’s kind of nice. Some of the coleslaws I’ve tried had celery seed or mustard added to it. Other coleslaws are soupy, with a lot of mayo and even some sour cream thrown in to the mix! Some are sweet and others are savory, too.

So I’ve experimented and chose my favorite mayonnaise for my recipe for Spicy Chipotle Carrot Coleslaw – Kraft Reduced Fat Mayonnaise with Olive Oil. It’s rich tasting with a slight sweetness to it, but it has half the fat and calories of regular mayonnaise. While I was shopping at Walmart, I came across a new-to-me mayo – Kraft Chipotle Mayonnaise. It’s spicy with just enough kick to give my Spicy Chipotle Carrot Coleslaw recipe a special flavor.

I was trilled to not only find premade coleslaw mix at Walmart, but two different kinds – Tri-Color and Angel Hair. You can find the Marketside Cole Slaw mixes in the produce section next to the lettuce. I was also able to find shredded Marketplace carrots in the organic produce section.

So there’s no need to have a food processor to make homemade coleslaw. Even if you have one, if you’re in a rush and need to make a batch of coleslaw in the morning before work so it’s ready to grab on your way to your friend’s cookout, having that premade slaw is a lifesaver! (The coleslaw is best if it has a chance to sit for a few hours in the refrigerator.)

Grilled Chipotle Chicken Sandwich with Spicy Chipotle Carrot Coleslaw

Have you heard of “pig pile Elvis style”? Supposedly, The King liked to put coleslaw on his pulled pork sandwiches. I’ve had pulled pork sandwiches topped with coleslaw myself and they’re goooooood. Thus inspired, I brushed a chicken breast with Kraft Chipotle Mayonnaise, grilled it up, and served it on a Marketplace Ciabatta Roll with a layer of Spicy Chipotle Carrot Coleslaw. Doesn’t that look good? These ciabatta rolls are perfect for grilled chicken sandwiches and even hamburgers. You can pick them up in the bakery section at Walmart.

Spicy Chipotle Carrot Coleslaw

Ingredients

Directions

In a medium bowl, mix Kraft Mayonnaise with Olive Oil, Kraft Chipotle Mayonnaise, white vine vinegar, and monk fruit until combined.

In a large bowl, combine coleslaw mix and shredded carrots. Pour spicy chipotle dressing over shredded carrots and coleslaw mix. Toss thoroughly. Refrigerate until time to serve.
