Spicy Crab Soup (Maryland)

Ingredientes

  • 1 quart water
  • 3 x chicken parts (neck or possibly wing)
  • 3 lb canned tomatoes quartered
  • 8 ounce frzn corn thawed
  • 1 c. frzn peas thawed
  • 1 c. potatoes diced
  • 3/4 c. celery minced
  • 3/4 c. onion diced
  • 3/4 Tbsp. seafood seasoning such as Old Bay
  • 1 tsp salt
  • 1/4 tsp lemon pepper
  • 1 lb Maryland crabmeat

Direcciones

  1. Place water and chicken in a 6-qt soup pot. Cover and simmer over low heat for at least one hour.
  2. Remove chicken; refrigerateand skim.
  3. Reheat the broth. Add in vegetables and seasonings and simmer, covered, over medium-low heat for about 45 min, or possibly till vegetables are almost done. Add in crabmeat, cover and simmer for 15 more min, or possibly till warm. (If a milder soup is desired, decrease amount of seafood seasoning to 1-1/2 tsp..)
  4. Yield: 8 servings.
  5. Description: "from scratch chicken broth, fresh crab"
  6. NOTES : Look for fresh or possibly pasteurized crab meat only: cartilage removed (regular or possibly claw meat).
