Spicy Macaroni And Cheese

Ingredientes

  • 3/4 c. onion, finely minced
  • 1 x clove garlic, chopped
  • 3/4 Tbsp. jalapeno pepper, chopped
  • 1/2 tsp coriander
  • 3/4 tsp cumin
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. flour
  • 2 c. lowfat milk
  • 1 x 14 ounce. can plum tomatoes,
  • 4 x roma tomatoes, skinned and minced
  • 8 ounce elbow macaroni, cooked
  • 3/4 c. monterey jack cheese, grated
  • 3/4 c. sharp cheddar cheese, grated
  • 1/2 c. bread crumbs
  • 1/2 c. parmesan cheese

Direcciones

  1. Preheat oven to 375F.
  2. In a large saucepan, cook the onion, garlic, jalapenos, coriander, and cumin in butter over low heat, stirring, till the onion is softened. Stir in the flour and cook for 3 min. Add in the lowfat milk slowly, whisking, bring the liquid to a boil and add in tomatoes.
  3. Simmer for 2 min and add in salt and pepper to taste. Mix sauce, noodles, and cheese together. Pour in a greased 2 qt baking dish. Mix bread crumbs and Parmesan together and sprinkle on top.
  4. Bake for 20-25 min
