Receta Spicy Mutton Kothu Kari Masala

Wash minced mutton (Kothu kari) well in water. (Use a strainer to wash, it will make washing easier)

Add all the following ingredients to a blender grind them into a coarse mixture and set aside (It should not be very coarse).

(For Coarse Masala)

Coriander leaves - 2 spoons

Peppercorns - 1/4 spoon

Now place a pan on flame and add oil into it. After it heats up add the coarse masala and saute well on low flame, for 2 minutes or until the raw smell leaves and you get a nice aroma.

Then add the chopped tomato pieces, red chilli powder, turmeric powder, salt, and saute well until the mixture turns into a pulpy masala as shown in the pic. This will take 3 to 4 minutes.

Now add the washed minced mutton and stir well so that masala gets mixed well with the minced meat.

Then pour some 100 ml of water (1/4 glass of water) and stir well.

Cook on low flame for another 15 minutes or until the meat gets cooked well and the water content reduces.

Now remove from flame, pour lemon juice mix well and Serve!!

TIP 1: Reduce the amount of red chilli powder according to your taste. The measurement I have given makes it spicy so reduce if you wish.

TIP 2: Before grinding the masala you can also dry roast the cumin seeds, fennel seeds and peppercorns for a few seconds on low flame. This will help enhance the flavor and aroma.

TIP 3: You can also use minced chicken but mutton tastes (goat) much better.

TIP 4: While washing the minced mutton use a strainer to wash it. Place the minced mutton on a strainer and wash in running water, this makes work easier.

TIP 5: If in case you don't have minced meat you can take few boneless mutton pieces and beat it well using a heavy ladle or pestle (from the pestle and mortar set) for 5 minutes and then put it in a blender and grind for about 2 minutes. This will give you tender minced meat just like the ones you get in the market.

Serve as sides for dal or rasam rice, or any bread varieties or mix directly with rice and consume!!
