Receta SPICY PUMPKIN OATMEAL MUFFINS

These muffins are so good anytime. They really don’t need frosting on them but you could add cream cheese frosting. These muffins would be great for breakfast or a child’s lunch box. I love the pumpkin flavor with the spices and oatmeal.
- 1 Duncan Hines Signature Spice Cake Mix (18.25 ounce size)
- 1 cup quick-cooking oats, uncooked
- 1/4 teaspoon ground ginger
- 2 eggs
- 1 cup milk
- 1 cup 100% pumpkin
- 2 bananas, mashed
- 1 teaspoon vanilla extract
- 1 cup raisins
- 1 cup nuts (I use walnut pieces)
Mix oats into cake mix along with ginger with a whisk. Add eggs, milk, pumpkin, bananas, and vanilla using mixer. Fold in raisins and nuts. Fill cupcake papers 3/4 full. Bake in preheated 350 degree oven for 18 to 20 minutes, checking for doneness. Makes about 30 muffins. Enjoy!
