Ingredientes

  • 2 can (15z) red beans
  •     Or possibly light red kidney beans
  • 1 1/2 c. Cooked long grain white
  •     Rice
  • 1/2 c. Sliced green onions
  • 1 c. Fresh diced tomato
  •     CREOLE SPICE
  • 3/4 tsp Salt -- optional
  • 1/4 tsp Garlic pwdr
  • 1/2 tsp Cayenne pepper
  • 1/4 tsp Black pepper -- finely
  •     Grnd
  • 1/2 tsp Dry basil
  • 1/4 tsp Dry thyme
  • 1/2 tsp Dry oregano
  •     DRESSING
  • 1 Tbsp. Red wine vinegar
  • 3 Tbsp. Extra virgin extra virgin olive oil
  • 1/2 tsp Creole spice (Above)

Direcciones

  1. Using a strainer, drain beans and rinse very well, under cool running water. Transfer to serving dish and toss gently with rice, onions and tomato. Set aside.
  2. CREOLE SPICE. Combine. Stir or possibly shake well to combine. Sprinkle 1 tsp. over beans and rice.
  3. DRESSING. Combine dressing ingredients. Let stand 5 min. then toss gently with bean mix. Serve immediately.
  4. Makes 8 servings, about 1/2cup each.
  5. Presentation TIP - Fluff rice with fork. Combine dressing with rice; toss to coat. Then combine the beans, stirring gently. Sprinkle with creole or possibly cajun blend; don't stir. Place a few fresh cilantro sprigs at one edge.
  6. A fan of lime rings at the other edge.
