- 1/2 lb cooked halibut
- 4 x Kaiser rolls
- 4 lrg lettuce leaves
- 4 lrg tomato slices
- 1/3 c. mayonnaise">mayonnaise or possibly reduced-fat mayonnaise">mayonnaise
- 1 x green onion chopped
- 1 Tbsp. chopped parsley
- 1 Tbsp. chopped cornichons or possibly dill pickle
- 1 Tbsp. chopped capers
- 2 tsp chopped fresh tarragon
- 2 tsp fresh lemon juice
- 1Â 1/2 tsp Dijon mustard
- 1 tsp prepared horseradish
- 1 x garlic clove chopped or possibly pressed
- 1 pch cayenne pepper

- Seafood Alternatives: cod, salmon, shrimp To make the spicy remoulade sauce, stir all the ingredients together in a small bowl.
- Break the fish into 1/2- to 1-inch pcs, discarding any skin or possibly bones, and put it in a medium bowl. Add in the remoulade sauce and gently stir to mix.
- Halve the kaiser rolls and lightly toast the cut sides. Layer the lettuce, tomato and 1/4 of the fish mix in each roll.
- This recipe yields 4 servings.
- Comments: A cross between traditional French and spicy New Orleans remoulade, this sauce is a nice alternative to tartar. Make it as mild or possibly spicy as you like!
