Valentine’s day is a holiday that lots of people like to celebrate by dining out, but not me. I rarely go out for dinner, and when I do, I would rather go when the restaurants aren’t going to be crowded and over priced. I think Valentine’s Day is the perfect time to stay in the comfort of my own home and prepare a fancy-ish dinner for two like this Spicy Salsa Chicken.
This dish was inspired by a recipe in Cooking Light Magazine a few years ago. I put my own spin on it, and it has become one of my husband’s favorite chicken dinners. The chicken and salsa are a little bit spicy which we like, and the chorizo adds a nice smoky touch to enhance this flavorful meal. This recipe is easy and it can be put together ahead of time and popped in the oven for a few minutes just before serving. Spicy Salsa Chicken #SundaySupper Save Print Prep time Cook time Total time Author: Anne Serves: 2 Ingredients Pre-heat oven to 350 1 tablespoon chili powder 1 teaspoon ground cumin 1 teaspoon garlic powder ¼ teaspoon oregano ½ pound boneless chicken breasts pounded thin 4 ounces chorizo sausage For the Salsa 1 cup diced tomatoes (fresh or canned) 1 clove chopped garlic ¼ cup chopped onion 1 chopped jalapeno pepper 1 tablespoon fresh squeezed lime juice 3 tablespoons fresh chopped cilantro 2 to 3 ounces crumbled queso fresco Instructions Mix the spices together and rub them over the chicken - set aside Make the salsa - set aside Heat a skillet over medium heat - add the sausage to pan crumble while cooking it unitl browned Remove sausage from skillet and set aside Add the chicken to the pan and cook on medium high heat for about 3 minutes on each side until they begin to brown Top with sausage crumbles,salsa and cheese Bake for 15 minutes until heated through Nutrition Information Fat: 22g Saturated fat: 7.3g Unsaturated fat: 13.2g Carbohydrates: 12.6g Sugar: 4.9g Sodium: 548g Fiber: 3.9g Protein: 33.1g Cholesterol: 97.5 Wordpress Recipe Plugin by EasyRecipe 3.5.3226 This week the #Sundaysupper members are sharing their easy dinners for two in celebration of Valentine’s Day.
