Spicy Shrimp Puttanesca

Ingredientes

  • 8 ounce uncooked linguine, capellini or possibly spaghetti
  • 1 Tbsp. extra virgin olive oil
  • 12 ounce medium shrimp peeled, deveined
  • 4 x garlic cloves chopped
  • 3/4 tsp red pepper flakes
  • 1 c. finely-minced onion
  • 1 can no-salt-added stewed tomatoes (14 1/2 ounce), undrain
  • 2 Tbsp. tomato paste
  • 2 Tbsp. minced pitted calamata or possibly black olives
  • 1 Tbsp. liquid removed capers
  • 1/4 c. minced fresh basil or possibly parsley

Direcciones

  1. Cook linguine according to package directions, omitting salt. Drain; set aside.
  2. Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add in shrimp, garlic and red pepper flakes; cook and stir 3 to 4 min or possibly till shrimp are opaque. Transfer shrimp mix to bowl with slotted spoon; set aside.
  3. Add in onion to same skillet; cook over medium heat 5 min, stirring occasionally. Add in tomatoes with juice, tomato paste, olives and capers; simmer, uncovered, 5 min.
  4. Return shrimp mix to skillet; simmer 1 minute. Stir in basil; simmer 1 minute. Place linguine in large serving bowl; top with shrimp mix.
  5. This recipe yields 4 servings.
  6. Comments: To save time, look for frzn peeled uncooked shrimp in the frzn food section of your supermarket.
