Receta Spicy Sweetpotato Hashbrowns [Recipe Redux]

My second entry is a recipe for spicy sweetpotoato hash browns. I enjoy foods that have a contrasting taste, and these hash browns most definitely have that. Once the sweetpotatoes brown up they become a little cripsy and sweeter;the the heat from the jalapenos makes an interesting sweet and spicy taste. These make this an excellent side dish with roasted chicken, turkey or pork.
Spicy Sweetpotato Hash Browns
INGREDIENTS
3 Medium California Sweetpotatoes
- 1 1/2 Tablespoons of Olive Oil
- 1 Jalapeno Pepper - chopped
- 1/2 Teaspoon Ground CuminINSTRUCTIONS
- Peel the California sweetpotatoes and shred using a shredding disk on a food processor or a manual grater - set aside
- In large frying pan add olive oil
- Add jalapeno pepper and ground cumin to California sweetpotatoes and mix well
Add the shredded California Sweetpotatoes and and press down - cook for about 8 to 10 minutes until they begin to brown
Flip over and brown the other side of mixture
Once the potatoes are crispy and slightly browned - serve
