%3C/p%3E%3Cp%3EHaving%20a%20day%20off%20meant%20that%20I%20could%20leisurely%20drink%20tea%20Friday%20morning%20and%20catch%20up%20on%20my%20blog%20reading%20and%20commenting.%20%20%20%20As%20I%20was%20reading%20my%20favorite%20blogs,%20I%20found%20a%20perfect%20idea%20for%20lunch%20at%20Juanita%E2%80%99s%20Cocina.%20%20%20%20Jen%20posted%20Spicy%20Thai%20Noodles%20that%20sounded%20delicious.%20%20%20I%20went%20to%20the%20pantry%20to%20see%20if%20the%20Evil%20Kitchen%20Dwarfs%20had%20stocked%20what%20I%20needed.%3C/p%3E%3Cp%3EI%20sort%20of%20had%20all%20the%20ingredients.%3C/p%3E%3Cp%3EI%20used%20the%20noodles%20I%20had%20on%20hand%20(Jen%20calls%20for%20linguine)%20and%20added%20some%20fresh%20veggies%20from%20the%20garden%20(but%20had%20to%20use%20%20organic%20carrots%20from%20the%20fridge).%20%20%20I%20also%20used%20basil%20instead%20of%20cilantro.%3C/p%3E%3Cp%3EThere%20are%20a%20few%20rabbit%20nibbles%20on%20the%20radishes.%3C/p%3E%3Cp%3EAnd%20there%20were%20no%20nibbles%20left%20of%20our%20carrots%20from%20the%20garden.%20Nothing,%20nada.%20So%20I%20had%20to%20rely%20on%20organic%20knuckle%20busters%20from%20the%20store.%3C/p%3E%3Cp%3EI%20actually%20ended%20up%20cooking%20one%20more%20bundle%20for%20this%20salad%20because%20I%20thought%20it%20was%20too%20%22saucy.%22%3C/p%3E%3Cp%3EThis%20is%20a%20great%20dish%20served%20cold%20and%20was%20a%20perfect%20salad%20lunch%20%20for%20our%20day%20off!%3C/p%3E%3Cp%3ETwo%20caveats%20here:%3C/p%3E%3Cp%3EIf%20you%20make%20Jen%E2%80%99s%20dish%20(and%20please%20check%20it%20out%20here)%20and%20use%20linguine,%20be%20aware%20that%20the%20recipes%20says%20to%20let%20the%20noodles%20set%20overnight%20in%20the%20sauce.%20%20%20%20(Since%20I%20used%20softer%20Somen%20noodles,%20I%20didn%E2%80%99t%20do%20that%20and%20besides,%20I%20wanted%20lunch%20NOW.)%3C/p%3E%3Cp%3EThis%20is%20a%20dish%20with%20some%20heat,%20I%20tell%20ya%E2%80%99.%20%20%20%20It%20will%20sneak%20up%20on%20you.%3C/p%3E%3Cp%3ESpicy%20Thai%20Noodle%20Salad%20with%20Raw%20Veggies%3C/p%3E%3Cp%3EHighly%20inspired%20by%20Jen%20at%20Juanita%E2%80%99s%20Cocina%3C/p%3E%3Cp%3EHeat%20oils%20in%20a%20medium%20skillet,%20add%20red%20pepper,%20and%20simmer%20for%20about%20three%20minutes.%20%20Remove%20from%20heat%20and%20strain,%20reserving%20oil%20and%20discarding%20flakes.%20%20Add%20honey%20and%20soy%20sauce%20and%20whisk%20to%20incorporate.%20%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPrepare%20noodles%20according%20to%20directions.%20%20Once%20cooked,%20rinse%20under%20cold%20water%20to%20cool.%3C/p%3E%3Cp%3EToss%20together%20noodles,%20sauce,%20veggies,%20and%20basil.%20%20%20%20%20Serve%20with%20chopped%20peanuts%20on%20top.%3C/p%3E%3Cp%3EI%20really%20think%20that%20any%20raw%20veggies%20you%20have%20on%20hand%20would%20work%E2%80%94bok%20choy,%20tender%20asparagus,%20fresh%20peas,%20chopped%20spinach,%20baby%20kale%E2%80%94the%20possibilities%20are%20endless.%3C/p%3E%3Cp%3EThe%20chop%20sticks%20are%20only%20for%20effect%20here.%20I%20could%20never%20eat%20a%20noodle%20dish%20with%20them.%3C/p%3E%3Cp%3EThanks%20for%20lunch,%20Jen.%20%20%20(And,%20thanks%20for%20letting%20me%20glean%20inspiration%20from%20your%20great%20recipe!)%3C/p%3E){kind=link}
