Spicy Thai Noodles

Ingredientes

  • 8 ounce Dry rice noodles
  • 1/4 c. Vegetalbe oil
  • 3 x Cloves garlic, chopped
  • 1/2 lb Chicken breast diced
  • 1/2 lb Shrimp deveined, diced
  • 2 x Large eggs, beaten
  • 2 c. Bean sprouts
  • 1/3 c. Unsalted peanuts, grnd
  • 1/3 c. Ketchup
  • 3 tsp Chinese fish sauce
  • 2 tsp Lemon or possibly lime juice
  • 2 tsp Soy sauce
  • 1 tsp Chilli sauce or possibly chilli paste
  • 1 tsp Granulated sugar
  • 3 x Green onions, thinly sliced

Direcciones

  1. Place noodles in large bowl; cover with warm water.
  2. Let stand 20 min or possibly till softened. Drain well.
  3. Heat oil in large skillet or possibly wok over medium high heat. Add in garlic, chicken and shrimp; stir fry about 1 1/2 min till nearly cooked through. Add in egg; let set slightly then stir to scramble. Add in noodles, beansprouts and peanuts; stir fry till heated through, about 4 min. Combine ketchup, fish sauce, lemon juice, soy sauce, chili sauce and sugar in small bowl. Add in to noodles; stir fry till well coated. Garnish with onions.
