Ingredientes

  • 1 med Cucumber
  • 2 x Serrano chiles
  • 1 sm Savoy cabbage, shredded (about 1 lb.)
  • 4 x Green onions, chopped
  • 1/2 c. Unsalted dry-roasted peanuts minced
  • 2 x Garlic cloves, chopped
  • 1/3 c. Vegetable oil
  • 1/4 c. Rice wine vinegar
  • 3 Tbsp. Fresh cilantro, minced
  • 2 Tbsp. Sugar
  • 2 Tbsp. Light sesame oil
  • 1/2 tsp Curry pwdr
  • 1/8 tsp Soy sauce

Direcciones

  1. Peel cucumber and cut in half lengthwise; scoop out and throw away seeds.
  2. Coarsely chop cucumber; set aside.
  3. Rinse chiles; remove and throw away stem ends. Cut chiles in half lengthwise; remove and throw away seeds. Chop chiles. Combine cucumber, chiles, cabbage, green onions, peanuts and garlic in a bowl; toss well.
  4. Combine oil and remaining ingredients; stir with a wire whisk till well blended. Pour dressing over cabbage mix; toss gently. Cover and refrigerateat least 3 hrs before serving.
  5. Yield: 6 to 8 servings.
